My Teagan chose the word “RELAX” This made me smile so. She is 13 and has all the typical worries that we all do, but are amplified during the teen years. Her necklace will remind her to take a deep breath, relax & know everything is going to be ok. I love that it is a word with meaning, but still has a cool edge to it. This is my Teagan. Deep but with style. What a cutie.

My Colsie spent a long time trying to decide on a word. She spent a lot of time on the Krafty Kash site and looked through all the pendents. My Avery girl…oh her sweet word. She came to me and said “I have the perfect word.” When she told me what it was, my heart just overflowed. She chose “FORGIVE.” How precious is that? She is my little Jesus lover. She is 9 but has been in a love relationship with God since she was a wee one. Just yesterday we were at the mall and when we entered her favorite accessory store, she was on a mission. She had her purse around her with her own money in it. I was curious as to what she was looking for. She stood in the purchase line with a triumphant smile on her face & showed me what she found. She found cross earrings to go with her necklace. Precious girl.

What a fun experience for my girls. I am so thankful to Kashoan from Krafty Kash for being so thoughtful of them AND so generous.

Let me tell you a little about Kashoan. She describes herself as “just a dorky mom pursuing her dream” {smile} but she is so much more than that. I have the privilege of knowing her in person. Our kids go to school together, we follow each other on Facebook and instagram. We have not had a ton of time in real life together, until recently when we were both workshop presenters at the Jumping Tandem Retreat. I knew she was special as I have purchased a few of her necklaces, and her customer service is the best I know. I also knew she was special as I watch her family on instagram and there is just such love and genuineness about them. But having some time with her in person is what really opened my eyes to the joy that she is.

I sat next to her in the “speakers lounge” at the retreat. We presenters have to be “on” quite a bit, talking to many people. We also were all tired from the prep goes into our presentations. The speakers lounge gave a bit of respite from all of that, and that is exactly what I felt sitting next to her. Calm, relaxed, & at peace. She brings peace. We sat there, heads leaned back resting on the back of our chairs, chatting like we have known each other forever, but comfortable with the silences, too, as people who have known each other a long time are. Yes, she is a gift to know, and I’m so excited to introduce her to all of you!

Banana Bread Waffles With Cinnamon- Brown Sugar Syrup

We have had a very low-key, lazy few days here in Nebraska. The weather has been rainy which gives us a good excuse to just be indoors and CHILL! I have loved it. It is a holiday weekend, and also the weekend where my kids are on a high from getting out of school for the summer, so I decided to make something a bit sweet and celebratory for breakfast yesterday.

I went straight to my Breakfast Pinterest Boards and happened upon this Banana Bread Waffle recipe from A Kitchen Addiction, and it sounded just perfect. A treat, yet hearty enough to fill up tummies, especially when adding fruit and an egg to round out the breakfast. It smelled absolutely divine while I was cooking it, warming up this house on a rainy day.

My girls were delighted, especially with the oowy, goowy syrup. I tweaked the original recipe a bit. When I read through the ingredients I thought…”oh this is gonna be good…how can I make it even better?” Since I was already making something sugary and out of the ordinary around here, why not make it extra scrumptious? The ingredients in the syrup reminded me of cinnamon rolls, so I decided to add butter which would make it very much like the filling of a cinnamon roll. It was to die for! We ended up dipping our apples in it, too!

Enjoy…just not too often!

Banana Bread Waffles
Yield: 5 waffles

3/4 cup all-purpose flour
1/2 cup whole wheat flour
2 tbsp brown sugar
2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 1/2 large ripe bananas, mashed
3 tbsp butter, melted & cooled ( I use Earth Balance)
2 eggs, beaten
1 cup milk ( I use almond milk)
1 tsp vanilla extract

Cinnamon- Brown Sugar Syrup
Yield: about 1 cup

3/4 cup brown sugar
1/4 cup butter ( I use Earth Balance)
2/3 cup water
1 tsp vanilla extract
1 tsp cinnamon

Additional bananas for garnish, optional

1. In a large bowl, whisk together flours, sugar, baking powder, cinnamon, nutmeg and salt. In a small bowl, whisk together bananas, melted butter, eggs, milk and vanilla extract until well-combined. Add wet ingredients to dry ingredients and stir until just combined.

2. In a small saucepan, whisk together brown sugar & butter until butter melts. Add water, cinnamon, and nutmeg. Bring mixture to a boil over medium heat, stirring occasionally to prevent scorching. When mixture reaches a boil, turn heat to low, add vanilla, and stir occasionally until ready to serve.

3. Pour 1/3-1/2 cup of batter (depending on the size of your waffle maker) onto hot, greased waffle maker. Cook to your desired crispness.

4. Serve with warm cinnamon-brown sugar syrup and additional banana slices, if desired.

My Top 5 Go-To Healthy Breakfasts

I’ve been asked lots of questions about what exactly it is that I eat, so I thought I would start with sharing my top 5 Go To Healthy Breakfasts.

I have slowly been changing the way I eat over the last 3 years since my cancer diagnosis. I have embraced what is called Nutritarianism and I have LOVED every minute of figuring out how to eat this way. I love food and I do not feel deprived at all as a Nutritarian…it is the opposite. I feel like I am experiencing a variety of foods and have developed a taste for wholesome, healthy food!

What is a Nutritarian?

A nutritarian is a person who has a preference for foods that are high in micronutrients.

The term “nutritarian” was coined by Dr. Joel Fuhrman. In his book, Eat to Live, he offers this health equation while describing the nutritarian approach to health:

Health = Nutrients/Calories (or H= N/C for short).

In other words: the more nutrients you consume per calorie, the healthier you will be.

Breakfast is a great way to get nutrients. Many breakfast foods are naturally high in nutrients. It is my favorite meal of the day.

My 5 Go To Healthy Breakfasts

Oatmeal Freezer Pucks
These are a staple for me. I always have them in my freezer, whether they are homemade by me or bought from Trader Joes. I always add some frozen berries to the top of mine, then warm it a few more seconds in the microwave. I also add cinnamon as it is surprisingly a very nutritious spice. I eat this breakfast at least 3 times a week. It keeps me full, regular & gives lots of energy.

Chia Oats
Oh how we love our chia oats around here! They really don’t need to sit overnight, but you will need at least 15 minutes for the oats to soften and the chia to swell and soak up the milk, which thickens the pudding. We use them as a snack almost more often than breakfast. We have them for breakfast at least once a week. These are incredibly healthy for you, with loads of fiber, protein & omega’s. Qia
This is my new go to breakfast and the one I have been eating most often lately. Talk about easy…2 tablespoons of cereal, top with milk and let sit a few minutes. Stir and eat. It is amazing how sustaining those 2 tablespoons of cereal are. I feel as full as if I ate a huge bowl of oatmeal. It is a bit pricey, but lasts a long time and well worth the health benefits that you get from this. They have a few flavors…the Cranberry Vanilla Qia is my new favorite flavor.

Berry Pancake Bites
These are a weekend go to breakfast for us, and a great afternoon snack. It uses a whole grain pancake mix. Make mix according to directions for pancakes, sprinkle top with berries, and bake. Couldn’t be easier, and these are so good my girls have started eating them without syrup, which is a bonus. Saves sugar calories and the grocery budget!

Bringing The Element Of Fire To Our Backyard

Our weather hit a record high yesterday, a 100 degree Nebraska day in May was a pretty big deal! I love the heat, and it made me excited to get out of the house and enjoy the outdoors.

We have a teeny, tiny backyard, and I am always trying to think of ways to make it a cozy outdoor area that we want to be in as a family. I have found that if I want the family to hang out in the back yard, all I have to do is light the sculpture and they come running. It just sets such a nice atmosphere, and is such a simple and minimal way to bring the beauty of flame to our backyard. I love it!

We’ve Got Power! #SocialPower

I love social media. I love how it connects people and how it can make a difference in all kinds of issues, big or small.

When I read about Social Power, it really made me smile. It is a platform that gathers the power of social media to resolve issues. I liked how it focused on issues that effect our everyday lives and gives an easy-to-use platform to voice those issues through photos, feelings, thoughts and ideas.

It uses the power-of-the-people to create change. As individual people, our hands are tied, and we are limited. As a collective group, our hands are linked, and we are powerful.

I watched the video below, and was intrigued by the idea of simply throwing out an issue that is effecting my everyday life, and seeing if it anyone else shares the same concern.

Social Power is for issues that are important, but for the REALLY important issues, like world peace, human trafficking and world hunger, you would want to use Change.org, not Social Power.

Social Power is a great way to send your opinion and voice on to your favorite retailers, or just get an idea that is in your head out into the vast internet world. You may just be surprised with how many share your thinking!

Once you get your issue on Social Power, they help raise awareness for it in their social network, while you do the same in yours.

When 1,000 people agree with your issue and give it a thumbs up, Social Power turns that issue into an initiative. Every initiative is potentially resolvable, and there will always be a person, board, or governing body capable of creating a resolution. Once an acceptable resolution is proposed, it is offered back to the Social Power user base., which usually comes in the form of a price reduction, a better product, service or experience.

Want to get in on some of this Social Power? Yeah, so did I. I think the issue that came to my mind just might make you smile. It is so typical of me to care about this particular issue, especially when I spend my life as a blogger in coffee shops!

I petitioned Starbucks to offer another milk alternative other than soy. I specifically asked for almond milk. Now, I get this is not going to save lives, but it just might make the day of another person who has a dairy intolerance, or who are unable to drink soy milk (many breast cancer survivors are told by their doctors to stay away from soy). I have 2 local coffee shops that offer almond milk which makes me very happy, but limits the places I can frequent. I really notice the lack of alternatives at Starbucks when we travel. I get so excited about the idea of a fun frothy drink while on vacation, then I get so disappointed when I remember there is not a milk alternative suitable for my needs.

Maybe, just maybe I can make a difference on Social Power.
