Raw Gingerbread Cookies

by Teniel Moore {raw foods contributor}

Who doesn’t love a gingerbread cookie at this time of the year?
To me the smell and spices of gingerbread reminds me of Christmas.

I have a wonderful easy raw gingerbread recipe for you that is made from all wholesome ingredients. Nothing highly processed or artificial.

A cookie you don’t have to feel bad about eating. Sounds good to me! This recipe does require a dehydrator. But don’t despair if you don’t have one. This cookie dough is good enough to eat raw.

Here are the delicious ingredients:

How to:

Raw Gingerbread Cookies
1 cup almond flour
1 cup oat flour
1/2 cup coconut sugar
2 tsp freshly grated ginger
1/4 cup coconut nectar
2 tsp black strap molasses
1 tsp ground cloves
1 tsp cinnamon
1 tsp salt
1/4 tsp nutmeg

Make your own almond and oat flour by grinding nuts and oats in a coffee grinder.

Place all the dry ingredients into a food processor and blend, then add the wet ingredients and blend.  Mix should come together in a ball.

Put mix on dehydrator sheet and roll out with your hands.  Mix will be sticky.  Cut into any shape you like.  Makes approximately 16 circle cookies.
Dehydrate on 105 for at least 6 hours, then take off the dehydrator sheet and continue to dry on trays until dried through.  Usually it will take at least12 hours or more.  Keep in the refrigerator.

——-

Your mix should come together into a ball in your food processor. It will feel a little sticky but should be firm enough to hold together & ready to be rolled out onto your dehydrator tray.

You can make the cookies just oval shapes, but I love to make stars, large gingerbread men or Christmas trees. Have fun & make use of your Christmas cookie cutters while in the festive season.

Remember these cookies are not going to rise or change shape so they can be placed very close together on your dehydrator tray.

These cookies go nice with a glass of home made almond milk. A good treat to leave out for Santa this Christmas eve.

Raw gingerbread cookie dough tastes great raw too. So if you don’t have a dehydrator then simply roll the dough into balls and enjoy. I also love to crumble up some gingerbread cookies and top it onto some home made gingerbread ice- cream.

I hope you enjoy these cookies just as much as I do.

Don’t Forget To Pin It!

A Health Update & Our Chrismas Decor

I’ve been resting and taking it easy as my body fights this infection.  I am not as inflamed and the pain is much, much better…but things still are not how they should be.  The skin is pulled so thin where the doctor put the stitch, and I worry about pulling it further as I don’t have nerves in that area.  I still have redness, but the area is smaller.  I will see Doctor tomorrow.  I am nervous.  I wonder if he is going to continue his gamble on me or say “that expander needs to come out.”  He warned me that 90% of expanders fail once there is exposure and infection, so it is not like I was not warned, but still, it will be hard news to hear.  It will mean another surgery, moving backward instead of forwards, losing this awesome feminine shape I have expanded into, healing for 2-3 months, & then starting over.

No. Fun.
I’m trying to keep my thought patterns on the positive.  It really helps to remember that THIS IS ALL COSMETIC AND NOT CANCER.  I think of those fighting for their lives right now and I find my perspective.  I have been there, and yes, this is all long and hard & I’ve cried about it, but I remember that am not fighting for my life and those tears dry up pretty quickly.

I also can’t help but look around and be so thankful.  I love Christmas.  Love, love love it!  I love the focus on relationship.. time with family and those I love, festivity & beautiful atmosphere, nostalgic music….all celebrating the birthday of the God-man I love so very much.

I have managed to slowly get our Christmas decorations out.  I minimized them last year and kept just my favorites and larger decorations.  I got rid of a lot of small knick- knacks that take work to dust and put away. That stocking candy dish is one of the very few small items I kept. I am so glad I got rid of the excess.  Christmas decorating has been easy & a joy.

Instead of my usual hot cocoa, I sipped on immunity building fresh juice.  It was really tart and good!

My 10 year old has been so busy looking at my Pinterest boards and getting all kinds of ideas for homemade decorations.  It has been a delight to see what she comes up with and using her creations to make our home feel so festive.  I decided to go for a more whimsical look this year, decorating with her homemade snowflakes & ornaments, putting our nutcrackers front and center, & decorating with our children’s Christmas books.  Our traditional tree is usually in the basement family room, with a fancy tree in our main living area, but not this year!  This year I only have the energy to do one tree and it will be our traditional tree with all our meaningful family ornaments on it in the main living area.  It is not done yet. We keep making plans to get it done and then plans fall through or I need to rest.  Again, I’m learning to exhale & take my time…setting it up with lights tonight and on our Friday family night we will all decorate it with ornaments.
A forced-slow Christmas.  I will take it!

Andes Chocolate Mint Cookies – A Christmas Tradition

Andes chocolate mint cookies

It is the week before Christmas, and it seems like sugar is merrily making its way into our home!  My little 9 year old has discovered a love for making recipes, which has been a load of fun. I’m eager to steer her toward more healthful recipes come the first of the year!

{Like this one: Chocolate Bliss Balls–3 ways!}

This awesome Andes Mint Cookie recipe is one that I make every year at Christmastime. It is so easy, and has 2 of my favorite holiday flavors, chocolate and mint!  They are simple, pretty and oh so yum.   I double or triple the batch, make a bunch of balls and freeze them until needed.  I love the ease of baking just a few, right before heading out to our different Christmas celebrations.  I also love that I have them in the freezer just in case a friend pops by, it is fun to have a little treat to bake at a moments notice!

Andes mints

Andes Chocolate Mint Cookies
1 box Devils Food Cake Mix
2 eggs
1/2 cup oil
Andes mints, unwrapped and cut in half

~Dump all into a large bowl, beat until combined.
~Roll into one inch balls.  (I just use a pampered chef small scoop and skip the rolling)
~Bake @ 350 for 6-7 minutes. (Don’t over bake, you want them soft.)
~Immediately, push an andes mint gently down in the center of each cookie.
~Wait a minute or so, until the top of the mint turns melted and shiny, then take a toothpick or tip of a knife and swirl the melted mint into a circle, creating swirly beauty. (my girls love doing this part)
~Let cool so the chocolate will set before putting on a platter.

Memory Tree

We have a tradition where each family member gets to choose a new ornament every year.  Todd started the tradition when we were dating, and we have done it every year.  It is my favorite family tradition, it is so much fun to take them out of their boxes, reminiscing about years past.

We make sure we get the Hallmark brand ornaments.  They come with the date on each ornament, they are well made to last throughout the years, and the boxes they come in are great for keeping them protected when being stored.  We shop for them a day or two after Christmas, when they are half off.

Come with me on a tour of our memory tree!

This was the first ornament we purchased together.  Todd lived in Chicago and I lived in Nebraska, so “Across The Miles” was very appropriate.
We were newly weds when we got this one.
My Aunt Linda gave this one to us.  I love it.
Baby’s 1st Christmas–another one from my Aunt Linda
That is our now 10 yr old!  Where did all that
chub-a-lub go?
This one is from my dad.  He thinks I’m the world’s greatest hair stylist.:)  Not sure if he is right, he is judging me based on the few hairs he has left to cut.  (Ha Ha.  Love ya, dad!)
This is another favorite of mine.
My 10 yr. old picked it out when she was 7.  That was back in the day when she loved dance and tutus.  Now she rolls her eyes when taking it out of the box and says “ugh, I hate tutus!”
This one makes me smile.  I bought it the year my youngest was 2.  She had green “feetie” pajamas just like this, short blond curls, and was into everything!
This one is priceless.  My mom made these when we were young.  We sold them at craft fairs and even door to door.  My parents used the money to buy a piano so that we could start piano lessons.
Poor guy lost an eye!
I love, love this one.  I picked it out when my girls were 5, 4 and 2.  My youngest really loved her pacifier, we let her keep it way to long!  These stack into each other and closes into one snowman.
This one is from Todd’s childhood.
My mom gave me this one.  It is beautiful with the light shining through it.
This is from my Great Grandma Jewel.  It is VERY special to me.
She is now in Heaven, she was one of the most amazing people I have ever met.
Give you one guess who picked this one out…
…and this one.  The sports center tv above has a button to push to hear the
sports center theme song.  Todd enjoys pushing it over and over, just to annoy me.
My youngest chose this one last year.  Much of her day is spent coloring.
Once upon a time, there were Dora fans in this house.  No more. (sniff)
My choice for last year.  I really, REALLY enjoy lattes and my cell phone.
The decorating begins!
I can’t believe my baby can reach that high! (is it me or does
that tree look tipsy?)
Hanging out with dad after a long night of tree decorating.
Hello.
Kids tucked in bed, tree finished, another memory made.
It’s a good life.

The Nativity Story /Family Movie Night

Above is a preview of the movie “The Nativity Story.” We watched this as a family (minus our youngest who was 5 last year, because of the “murder of all firstborn sons” scene) last December.  It is a beautiful movie, and it really made an impression on my older girls (they were 7 and 9), they are both so visual, it really helped bring the story to life for them.  I would like to make a tradition of watching it every year, so I plan on making some homemade popcorn and some fudgy buttons so we can snack, snuggle and watch it together on a near- future family movie night!

Most Friday nights you will find us at home, in the basement with popped corn, cozying up on the couch and watching either recored tv or a movie as a family.

During the summer months and during the month of December, (summer break and winter break) we buy the Blockbuster Monthly Movie pass. (it is called the Blockbuster total access in-store subscription)  It allows 2 movies out at a time, unlimited amount of time, for 30 days, one fee.  This is our little family splurge, it replaces going to the movie theatre as a family, so really, it is quite inexpensive comparably.  We usually get the deal that allows us to rent wii games, too, so that is super fun when the cousins are over for summer/winter break sleepovers.  The best part is NO late fees!!

I love it.  We are able to catch up on the movies we missed throughout the year.  Todd and I have had many fun date nights watching a movie in our basement once the kids go to bed.  Who needs a movie theater?

When we don’t have the pass, we watch recorded tv as a family, like “Amazing Race” or “American Idol,” on the weekends.  As you can tell, we are a family who likes our tv!

Sugar Frustrations & Andes Mint Cookies!

I am looking forward to January.  Why? Since Halloween, I feel like sugar and processed foods just keep hanging around at the Bowman house! I have yet to figure out how to do the holidays in a balanced way.   It is important to me that my kids experience candy treats and seasonal goodies, some of our best memories and traditions are made from these goodies, but it is starting to drive me nuts seeing all the junk hanging around here!
Before this quadruple- whammy sugar season (Halloween, Thanksgiving and Christmas and New Years) I was able to keep our home pretty much sugar free with very little processed foods, so when we would go to a party or a family function, I was at peace letting my girls eat whatever their little hearts desired, because I knew they were getting what their bodies needed at home.  But then, boatloads of Halloween candy came into our home, Thanksgiving and all its pies and yummy leftovers were in our home, and now and all our yearly, traditional Christmas recipes are merrily making their way into our home!  Agghhh!

For now, I am going to just embrace the season, try to remember that we have come a long way in our eating habits, and know that January is coming!

I would like to be more purposeful about creating a recipe box full healthy treat ideas for the years to come, so I am excited to be participating in a “Healthy Holiday Eats And Sweets” blog carnival coming up on December 8th.  I think I will get some great recipes that still make the holidays special and yummy, but do it using whole foods that are real and nourishing.

Until then, here is one that is not!:)  This cookie recipe is one that I make every year at Christmastime.   It is so easy, and has 2 of my favorite holiday flavors, chocolate and mint!  They are simple, pretty and oh so yum.   I double the batch, make a bunch of balls and freeze them until needed.
