Chocolate Covered Marshmallows

I was at home with my oldest girl, and I heard her in the kitchen.  It sounded like she was doing the dishes, and found myself getting a bit excited about the idea of her doing a chore without me asking her to.

 I decided to go in and see what was going on.  As I walked into the kitchen, my nose got a whiff of chocolate.  I saw something that got me even more excited than my dishes getting done.  Here is what I saw:

I also saw my daughter standing there licking chocolate off a spoon and looking quite pleased with herself.  This is the same daughter who does not like to cook, so I was surprised and quite pleased!

I was especially pleased with her cleverness.  I wondered how she made the yummy chocolate drizzle and she said,

“I melted my chocolate Easter bunny!”

So clever.  I praised her efforts and told her I wanted to feature them on the blog.  She smiled and said, “Yeah, I was thinking about that..:)”

The size of these little sweet treats are perfect for popping in your mouth when a treat is needed.  If you want to make your own, gather the leftover chocolate Easter bunnies in your home, melt in the microwave, then dip and drizzle over miniature marshmallows.  Let sit until chocolate is hardened.

No Bake, No Sugar Chocolate “Larabar” Truffles

You are gonna like these!  They are really good.  They are make from very healthy ingredients, and contain no sugar.  They taste very much like a Chocolate Coconut Larabar.  I have always been a fan of Larabars because they are made out of just a handful of healthful ingredients…
… the above bar contains-dates, almonds, walnuts, unsweetened cocoa and coconut. That is it!!

I knew these would be easy to replicate, so I was excited to see that the Nourishing Gourmet had already tried and succeeded!  I used her recipe and was really happy with how they turned out!

I packaged some of mine pretty to take to my Radiation Oncologist as a thank you on my last day of radiation.  He is a diabetic, and I knew he had been staying away from refined sugars.  He seemed pleased to have a treat that was sugar free, tasted them and approved!
You DO NOT have to be a date lover to like these.  I do not like dates!  In this recipe, they provide the sweetness and I could not tell there were in there. 2 of my 3 girls loved these and couldn’t get enough. My oldest is not a fan of coconut, so no luck with her.  The neighbor kids gave them 2 thumbs up and asked for more.

Here is the recipe, adapted from the Nourishing Gourmet:
 Chocolate “Larabar” TrufflesMakes about 20 truffles
    20 dates, pitted
    1 cup of coconut flakes, fine
    1/4 cup of coconut oil
    Heaping 3/4 cup of cashews, walnuts, pecans, or nut of choice
    2 ounces of unsweetened chocolate, finely chopped
    1 teaspoon vanilla
    A few dashes of unrefined salt
1) In a food processor, combine the pitted dates, coconut flakes, and coconut oil. Process until the mixture is finely ground.
2) Add the nuts to food processor and process until the nuts are in very small pieces (some even completely ground)
3) In the warm pan, add the chocolate to melt. If you need a little more heat, put on the very lowest heat on the stove, just until melted to prevent burning. Scrape into the food processor and add the salt and vanilla. Process until well mixed.
4)  Roll into balls (refrigerate for 30 minutes if too sticky…mine were not) and place on a plate or in a container and then harden completely in the refrigerator. Keep cool until you serve and enjoy!

I’ve been on the lookout for a gooey, chewy granola bar recipe. I checked out some of my favorite sites, and I should have known Heavenly Homemaker’s has been on the same hunt. She, too, wanted one with no corn syrup, and of course, she came up with one. It is one I really want to try again so I can do it right and experience her true recipe, but oh my, am I glad I messed it up because the concoction it made was DELISH!

Easy Homemade Chocolate Sauce For Ice Cream

 

I’ve given this away as a gift and made it 3 times for my own family.  It is one of those recipes that I  know I will be in the family for a very long time–it is SOOO good.

It is quick, it uses ingredients we usually have on hand, and it tastes WAY better than store bought chocolate sauce.  When I served it to my husband, he just kept grunting and saying “MMM”& “YUM” as he scraped his bowl clean.

I’m surprised he didn’t get his face in it and lick it clean!  Yes, it is that good.

Here is the recipe, it is from recipebzaar.com.  It was recommended by another blog, but I can’t remember which one, which I’m feeling pretty bad about because they deserve a big thanks from me!

 

 

Lee Lee’s Famous Chocolate Sauce For Ice Cream
2 min/1 minute prep time

Serves 4-6

1/2 cup sugar (I use whole cane sugar -rapadura)
2 Tablespoon Cocoa
1/8 tsp Salt
1 1/2-2 Tablespoon Butter
1/4 cup water (more or less, as needed to make a stir-able consistency)
1/4 tsp vanilla extract (can’t beat 100% pure vanilla extract!)

1. Combine sugar, cocoa, and salt in a small saucepan.
2. Add enough water to make stir-able consistency.
3. Add butter to cocoa mixture.
4. Bring to a boil over medium-high heat, stirring constantly.
5. Allow to boil for 1 minute, stirring.
6. Remove from heat.
7. Add vanilla.
8. Serve warm over ice cream.

Chocolate Mudballs

Well, Laura at “Heavenly Homemakers” has done it again.  She has taken a simple recipe, used whole ingredients, and provided my recipe box with one more “make often” recipe.

These chocolate mudballs just hit the spot!  They are great when you are wanting a bit of a chocolate treat, but use ingredients like wheat germ and oats to make them a treat that has some health benefits.  Love that!

I whipped them up in literally minutes, right before I left for my Tuesday Night Women’s Bible study group.  These women are often my taste testers with new recipes, I love their honesty and can count of the variety of tastes in the room to know whether or not a recipe is blog worthy! (I made bars that resembled bird seed one week and we all wondered if the birds would even eat them…they were NOT good:) These little mudballs received rave reviews, so here they are!

 

Mudballs
1/4 cup peanut butter
1/4 cup honey
1/4 cup wheat germ
1/2 cup oatmeal
1/4 cup 
chocolate chips 
1/4 cup sesame seeds
Cook the peanut butter on honey over low heat until melted. Add remaining ingredients. When cool enough to handle roll into oohey gooey mud balls.
This batch made 12 balls, next time I will double the recipe.
My girls loved these.  They felt like they were eating cookie dough, and were disappointed that we had to share with my group!  I made them yesterday, and plan on going to the store for more sesame seeds so I can make them again today.  
I had a reader send me a recipe she thought I would like (how sweet is that?) and she was right on.  They are balls that are just like these, with just a couple ingredients switched up- they use ground flax seed instead of wheat germ, so it would be a great way to get those Omega 3’s!  Here is the link to that recipe if you want to check it out, the link will take you to a Disney website.  I will let you know when I make them how they turn out.

Fudgy Buttons

Tonight I wanted something sweet, and there was NOTHING in the house (I need to grocery shop!).

I knew it was time to pull out my recipe for Fudgy Buttons once again.  I found the recipe in a magazine, given by a grandma who said she stirred up a batch for her grandkids every time they visited. I’ve made these many times, and I am sure I will still be stirring them up when I am a grandma.

I like them for a few reasons.  I always have the ingredients on hand,  I don’t have to turn the oven on,  I can make them in 5 minutes, my girls can help roll the balls and make them into buttons, they are round and cute, and they satisfy even the most intense craving for chocolate and peanut butter.

They are not the healthiest thing we could choose to eat, but when compared to the ingredients in some of the most popular chocolate and peanut butter candies:

Peanuts, Milk Chocolate, Sugar, Cocoa Butter, Chocolate, Nonfat Milk, Milk Fat, Lactose, and Soy Lecithin, and PGPR, Emulsifiers)Sugar, High Fructose Corn Syrup, Partially Hydrogenated Vegetable Oil (Cottonseed, Soybean, Palm Kernel, and Palm Oil)Sorbitol, Dextrose, Chocolate, Nonfat Milk, High Maltose Corn Syrup, Refined Palm Kernel Oil, Cocoa Butter, Salt, Corn Syrup, Whey, Whey Protein Concentrate, Caseinate, Soy Lecithin, Artificial Flavor, Glycerin, Lactose, Mono and Diglycerides, and TBHQ.

I feel pretty good about my 5 ingredient, (ones I can pronounce!) cute, little Fudgy Buttons.

An easy, 5-ingredient snack for when you need a quick sweet.

Recipe Type: Sweets
Servings: 4 people
Ingredients
  • 4 Tbls butter or margarine
  • 3 tsp baking cocoa
  • 1 cup confectioners' sugar
  • 1 tsp milk
  • 4 Tbls creamy peanut butter
Instructions
  1. In a small saucepan, melt the butter; remove from heat. 

  2. Add cocoa and mix well. 

  3. Stir in sugar. (Will be quite thick) 

  4. Add milk and stir until smooth. (You will feel like you should add more milk- don't. The peanut butter will make it creamy and perfect) 

  5. Add peanut butter and mix well. 

  6. Drop by teaspoonfuls onto waxed paper; roll into balls and flatten with your thumb.
