Salted Caramel Pumpkin Latte No Sugar!

We have a week of rainy cool Fall weather here in the Midwest, so I plan on finding some extra slow, cozy moments with my hands wrapped around a warm mug!

Fall Season = Pumpkin Season

Rainy fall season means it is pumpkin season! Every time I go to the store, I find myself grabbing a can of pumpkin.

They are piling up at home and I couldn’t be happier about it. I have pumpkin plans ya’ll!

I was giddy when I saw that this recipe called for a good 1/3 cup of pumpkin. Talk about a fun way to get some veggies in!

 

At Home Salted Caramel Pumpkin Latte

It is so tempting to spend too much money on seasonal drinks this time of year, but it is quite easy to make them yourself at home.

Plus, you get to wear your robe while sipping!

I really like knowing exactly what is in my cozy drinks and want to avoid the copious amounts of sugar most of the store-bought or coffee shop drinks have in them.

No Sugar Salted Caramel Pumpkin Latte

A great way to cut sugar intake is to use Stevia in The Raw® instead of sugar. Stevia is an herb and the leaves are super sweet!

Salted Caramel Pumpkin Latte Recipe

This recipe makes a quick thick pumpkin caramel sauce on the stove, then you stir it into warmed milk and hot coffee. Easy!

I tasted the salted pumpkin caramel alone and it was SO yummy. I bet it would also be great added to hot chocolate or added to steamed milk to make a Salted Caramel Pumpkin Steamer.

Ingredients
  • 2 packets Stevia In The Raw®
  • 1/2 tablespoon butter
  • 2 tablespoons heavy cream
  • 1/3 cup pumpkin puree
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon pumpkin pie spice
  • 3/4 cup 1% milk
  • 2/3 cup hot coffee
Instructions
  1. In a small skillet, stir together Stevia In The Raw® and 1 teaspoon water to dissolve stevia. 

  2. Add butter and cook over medium heat, stirring occasionally, until deep brown bits form on the bottom of the pan.

  3. Remove from heat and stir in cream, pumpkin, vanilla, salt, and spice. 

  4. Heat milk until steaming, then add coffee and pumpkin caramel mixture and stir to combine. 

  5.  If desired, top with whipped cream and sprinkle with pumpkin pie spice.

Recipe Notes

*I used only 1/8 teaspoon of salt as I don't consume much salt so I can be a bit sensitive to the taste.

      Yes it is gooood! Don’t forget to 1/2 the salt…I wrote the recipe as the recipe from Stevia suggested it, but your tastebuds are like mine so I think you will like less salt. <3
