Favorite Cheezy Kale Chips

 

Cheesy kale chips

Kale is a leafy green that I try to get into my body at least every other day.  It is the most nutrient dense leafy green and is full of all kinds of cancer fighting phytonutrients.  I use baby kale in my salads & green smoothies, but my favorite way to eat kale is to make kale chips.
I have been making this recipe like crazy lately, and find myself eating the entire pan by myself!  It is a great way to get a large amount of nutrients into the body, and at the same time satisfy any cravings for a salty, cheesy, crispy, crunchy snack.
I LOVE KALE CHIPS!
Here is my favorite way to prepare them:
Olive oil drizzed on baking sheet

Drizzle a little olive oil onto baking sheet.  Use pastry brush to spread out evenly.

Washing kale

Wash kale.  There are 2 types.  Curly & Lacinato.  I like to use lacinato, which is this large, flat type.  If you use curly kale, you can use this same recipe but just toss in a bowl with tongs to coat.

De-veining kale by taking stem out of the middle.

De-vein kale by taking out the tough stem that is in the middle.  It is bitter so make sure to remove it.  I just tear it with my hands.

Tear kale into pieces…or not.  Whatever shape and size you desire.

Trader Joe's ingredients including olive oil and soy sauce

Have ingredients ready.  You will need olive oil, soy sauce (or tamari), any type of grill seasoning, pepper, & nutritional yeast (or Parmesan cheese for non-vegans).

Drizzle about a tablespoon of olive oil over washed kale.  Can use a pastry brush to coat…I just use my fingers!

Soy sauce on kale.
Then drizzle with a 1/2 tablespoon – 1 tablespoon of soy sauce.  Use pastry brush or fingers to coat leaves.
Nutritional yeast on kale leaves.

Sprinkle with nutritional yeast (or parm cheese) until coated to your liking.  I use about 2-3 tablespoons for this batch.  I just eyeball it.

Grill seasoning on kale chips
Add about a teaspoon of grill seasoning –or any seasoning you like.  Curry is good, Italian seasoning is good, but my fav is Trader Joes 21 Seasoning Salute.  I used about half of what is in my palm in the pic.

After adding seasoning, use the pastry brush or your fingers to spread all together onto the leaves.  Basically you are just wetting the seasonings with the oil and soy sauce.  Nothing fancy, it does not need to be perfect.

Bake at 250 degrees for 15-20 minutes or until crispy.  Watch closely.  The time between crispy and burnt is just a couple minutes.  I can usually tell when it is done by my nose.  It smells really yummy when it is crisped up and done. If it is crispy, it is done.  Break into pieces and enjoy.  Can also crumble and use on soups and to top salads.

Cheezy Kale Chips
3-4 large kale leaves
2-3 tablespoons olive oil
1/2-1 tablespoons soy sauce (or tamari)
2-3 tablespoons nutritional yeast or Parmesan cheese
1/2-1 tsp grill seasoning
pepper to taste
Wash kale leaves.  Take large vein out of center of kale.  Spread about 1 tablespoon olive oil onto pan. Lay kale leaves down on pan in single layer.  Drizzle remaining olive oil onto kale, just enough to coat each leaf.  Use pastry brush or fingers to spread onto leaves.  Do the same with the soy sauce. Sprinkle with nutritional yeast or Parmesan cheese.  Sprinkle with seasoning and pepper, then spread seasonings into the oil and sauce using your fingers or pastry brush.  Bake 250 degrees or 15-20 minutes or until crispy.

6 Awesome At Home Workouts & Why I Chose Home Over Gym

I often use this blog as a way to keep myself motivated and on track with living my best life.  It is almost like a life journal if you will.  It keeps my most loved recipes organized, it keeps track of my weekly goals, my weekly home cleaning zone, my weekly hot spots & pins I want to accomplish. I use it to record my menu for the week with Recipes I Want To Make This Week posts.  I use it to leave behind a Legacy for my girls and to record Captured Life Tidbits & List The Gifts life brings.  Songs that touch my heart go here, and Garden Progress goes here.  It really is a labor of love that I SO ENJOY doing and sharing with you all!

A piece that I need to add back into my life in order to live my best life is the dreaded EXERCISE.

When I was sick, I had a gym membership gifted to me from a dear, most thoughtful and generous friend.  It was an overwhelming gift that made me feel so loved and hugged by her every time I entered the building of this luxury gym.  I spend hours healing there.  I healed physically and spiritually.  There were many moments of prayer spent in the steam room, God thoughts in as toxins perspired out.  It was a place I went to feel strong and beautiful again, pampering myself in the beautiful locker room that felt more like a spa.  A gift I will never forget.

Being 3 years out of my battle, I decided it was time to let go of that most generous gift.  Not only did I want to not take advantage of my friends generosity that had lasted so long, but I have been purposefully looking for ways to simplify life, and driving across town to my precious gym was not always the most simple use of time.  When I was healing it was perfect, for even the drive there was a time of reflection and rest.  But now, I decided, it was time to let it go and save the 40 minutes it took to drive there and back, and the gas, and figure out how to move my body without the membership.

My main goal right now is to move everyday.  I want to walk at least 5 days a week, but also add in some strength training.  I am not going for perfection here.  If that were the case, I would never start!  My simple goal is to move everyday.  Here are 6 great pins that are going to help me do just that.

1. 15 Minute Workout With Exercise Bands Via Women’s Health Magazine
Exercise bands are great for taking anywhere…on your walk to do when you arrive at the park, in your bed, in front of the tv.  Perfect, portable resistance!

Maybe a goal for the beginning of next month?

3. TV Workout Via Self
This is awesome.  30 minute TV show.  Do some easy strength training reps, timed perfectly for the first commercial break.  Commercial break-switch to cardio.  Alternating between the two is a great workout, and you can watch your fav show at the same time.  Multi-tasking!

4. The Quieter Workout Via Back On Point
For when the kids go to bed. Or if your college roommate is studying.  Or early morning when everyone is still sleeping.  Note from Pinner: Since pinning this a month ago, I’ve done this workout 3-4 times a week. I am now 15 pounds lighter and 1 entire inch thinner. My name is Erika and I approve this workout.

Beauty Tips To Combat Allergy Face

Allergies are something very familiar to my family!  I grew up with such severe allergies that I had to stay in from P.E. & recess and play chess with my teacher!  I can now “kick- it” in chess, but I would have rather been outside kickin’ a ball as a kid.   I have outgrown my allergies, but now I watch as my own children and husband struggle with them.

We do what we can to build up the immune system naturally, but there are specific seasons where Zyrtec is the only way to go in my family!   It is one of the main ways we combat allergies. My husband takes it year round my 8th grader daughter takes is seasonally, mainly in the fall until the first freeze.  
While Zyrtec makes you feel better, there is another problem I’d like to address, called Allergy Face  What is allergy face?  Watery red rimmed eyes, puffy face, red nose & what my doctor calls “allergy shiners” which are dark circles under the eyes.  Allergy Face is something that definitely effects my daughter, which is a problem as we all know these things matter REALLY matter when you are in middle school, and lets face it, it matters for most women suffering from Allergy Face.

Can you believe 81% of women think they can never cover up their Allergy Face?  That high percentage really surprised me.

Here are a few of my own go-to beauty tips/methods for combating Allergy Face for when you are suffering from allergies and Allergy Face. 
~lay a hot washcloth over you face before applying makeup, allow the steam to soothe and de-puff itchy eyes
~use a good face moisturizer.  Often blowing your nose can make the skin around it dry and sensitive.  Moisturizer will help.  My daughter has been Say Yes To Tomatoes moisturizer, and likes it.  I like that it has no parabens in it!
~use a gentle eye makeup remover.  Consider making your own 2 Ingredient Organic Eye Makeup Remover.
~make sure you have a good concealer on hand to cover those ALLERGY FACE shiners!  I love Amazing Concealer by Amazing Cosmetics. This one is expensive, but it lasts for ever, is used by professionals in the beauty industry, and is the best I have ever used!  
~use same concealer to mask any redness from an itchy nose that has been blown too often.
~often the bottom inner lid of your eye is extra red due to itchy eyes.  Use this tip to cover it with a fun colored eyeliner, which will mask allergy face!
~use an eyedrop that redness out of eyes.
~make your lips the focus with bold color which will draw attention away from your eyes.
~consider using a Netti Pot along with your allergy meds as another way to combat allergies.  It washes the pollens out of the nasal cavity, which brings relief to many.

I am a fan of Micheal Pollan. 
 
He was the first one that I have read who was able to take the incredibly complicated question of
 
 “What Should I Eat?”
 
 and answer:
 
“Eat Food. Not too much. Mostly plants.”

“Eat food and avoid edible food like substances.”
 
 I read his first book, In Defense Of Food, a year ago and just really jived with it.   I was so happy to see that he came out with a short, easy to read, manual that expands on the answer. 
 
Each page gives a simple tip on what to eat.  I read the book in 30 minutes and loved it.

Here are some of my most favorite rules from the book:
 
#2 Don’t eat anything your great-grandmother wouldn’t recognize as food.
 
(for example–neon colored tubes of flavored gel called Go-GURT!)
 
 
 
#3 Avoid food products containing ingredients that no ordinary human would keep in the pantry
 
(ethoxylated diglycerides??)
 
 
 
#4 Avoid food products that contain high-fructose corn syrup
 
(it is a reliable marker for a food product that has been highly processed)
 
 
 
#5 Avoid foods that have some form of sugar (or sweetener) listed among the top three ingredients.
 
(exception to this rule, are “special occasion” foods–see Rule 60)
 
 
#6 Avoid food products that contain more than five ingredients.
 
(another sign that it is a highly processed food)
 
 
 
#7 Avoid food products with the word “lite” or the terms “low-fat” or “non-fat” in their names.
 
( Refined carbs can make you fat.  Sugar makes you fat.  Many low-fat or no-fat products boost the sugar and salt to make up for the flavor lost when removing fat)
 
 
 
#10 Avoid foods that are pretending to be something they are not.
 
(imitation butter-aka-margarine-is the classic example.  Artificial sweeteners..)
 
 
 
#11 Eat only foods that will eventually rot.
 
(real food is alive food…therefore it should eventually die)
 
 
 
#12 Eat foods made from ingredients that you can picture in their raw state or growing in nature.
 
(read ingredients on a package of Twinkies or Pringles and imagine what those look like raw or where they grow…ya can’t!)
 
 
 
#19 If it came from a plant, eat it; if it was made in a plant, don’t.
 
 
 
#22 Eat mostly plants, especially leaves
 
(antioxidants, fiber, omega- 3 fatty acids, energy dense!)
 
 
 
#23 Treat meat as flavoring or special occasion food.
 
(become a “flexitarian”–someone who eats meat only a couple times a week)
 
 
 
#25 Eat your colors!
 
(colors from nature are full of polyphenols, flavonioids, carotenoid, which all fight disease!)
 
 
 
#34 Sweeten and salt your food yourself.
 
(you will find you are consuming a fraction as much sugar and salt as you otherwise would–example oatmeal–buy plain not flavored, sweetened or colored!)
 
 
 
#36 Don’t eat breakfast cereals that change the color of the milk.
 
(ha..like that one.  It’s kind of a “duh”)
 
 
 
#37 “The whiter the bread, the sooner you will be dead”

#39 Eat all the junk food you want, as long as you cook it yourself.
 
(if you made all the french fries you ate, you would eat them much less often!  Too much work!)
 
 
 
#57 Don’t get your fuel from the same place your car does
 
(Gas stations have become processed corn station.  Ethanol outside and high-fructose corn syrup inside!)
 
 
 
#60 Treat treats as treats.

A Quick Lunch Salad & How To Keep Your Salads Interesting

Sometimes reaching my goal of getting leafy greens into my body everyday can get boring.  Especially in a salad form!  I have made it my mission to find ways to motivate myself to keep up the salads and buy ingredients to take them from boring to delicious!  
Here are 2 key ways I do this:
1. I use a mandolin to slice my veggies, then store them in mason jars.  Cut em’ once, store them for the week.  
2. Splurge on ingredients that make compliment greens and make them delicious. A couple ways I do this with seasoned/ glazed nuts & sesame sticks.  I have even been known to crush wheat crackers and sprinkle on top for a little bit of crunch.  I also like to do it with fruit, from dried cranberries to sliced apples & clementines.

Add beans for protein…or hard-boiled eggs.

Splurge on the extras.  These Sweet & Spicy Pecans from Trader Joes are amazing, and I also love their sesame sticks. It may add a few extra calories, but to me it is so worth it when I think of all those flavonoids, anti-oxidants & vitamins I am getting from the veggies.

Dreaming Of Aruba

I sure would.
Todd and I have been married 16 years and went on a cruise to the tropics for our honeymoon.  Every anniversary we talk about visiting the islands again, but as you all know time just keeps passing.

But, part of living fully is dreaming, and after reading all about Aruba, I DREAM of Aruba!  This is where I would want to go if I had the opportunity.

Todd and I are both pretty laid back when it comes to vacations.  Especially if the kids were left home.  We would want to have plenty of relaxing beach time, and the evenings would be full of romance and maybe a bit of dancing!

The waters around the resort areas are a calm, glittering turquoise fringed with marshmallow-soft ivory beaches.  This is where we would spend most of our time if I had my way. Chillin’ like a villian.  Even on the water I would prefer sailing on a luxury catamaran, laying around on it with a glass of wine in my hand over windsurfing,  kite surfing or wave running. 
 Something that is unique to Aruba travel is that there are sharp geographical differences, which is appealing to those who love both land and sea. It is amazing how many different ways you could spend your time in Aruba, depending on how you are wired and what means “vacation” to you.

 For those of you who are more active, there is a neighboring national park that is a bit more unsettled and rugged.  Hikers can explore twenty rugged miles of trails in Arikok National Park. I personally would prefer to tour the island in one of their air-conditioned motor coach, but if you are more of a jeep safari type, there are those too!

Todd and I are both foodies, so vacation ALWAYS means spending lots of time exploring the unique cuisine each place has to offer.  Aruba is known for their abundance of restaurants & diversity of cuisines prepared by world-class chefs.  Argentinean, Middle eastern, Japanese, Spanish, Caribbean — the tiny island nation of Aruba provides an impressive world culinary experience.  Yes, please!  I would be in heaven.

Driving is on the right sid eof the road, foreign and international driving licenses accepted.  There is free parking througout the island!  Bonus!!
