Healthy Homemade Fruit Roll Ups

These are so very easy to make, and my kids’ excitement over them made me feel like “Mother Of The Year!”  I’ve seen a few recipes and methods across blog land and have wanted to make them for some time now. The easy tutorial and beautiful photos over at “The Little Red House,” plus a bowl of apricots quickly becoming past their prime in my refrigerator, was enough to get me to do it.  I don’t know why I didn’t do it sooner!

I have been appalled by how expensive 100% natural fruit roll ups and fruit leathers are at the store.  When we visit our local health food co-op, my girls beg me to buy them a fruit leather.  I cringe if they are not on sale, and even on sale, they are outrageous.  One 2″x 5″ strip of fruit leather costs anywhere from a $1.00-$1.29 at our store. The cheapest I have found them is on Amazon for about 50 cents each. I buy them occasionally because at least it is not candy, but I buy it with a “grr” on my brain!

The regular fruit roll ups at the grocery store are not 100% fruit have artificial colors, flavors, and high fructose corn syrup–all things I try to avoid. (click here to read why high fructose corn syrup and I are not very good friends).

 

  I love that instead of wasting fruit that is getting mushy, I can just mush it up more and turn it into fruit leather!

 

Ingredients:

4 cups Apricots 

Squeeze Of Lemon Juice

2-3 Tbls Sweetener of choice (agave nectar, sugar, sucanant)

 

*I’m sure other types of fruit can be used, I will let you know what other fruit I have success with.

How I Made Healthy, Homemade Fruit Roll Ups

~I started with 9 apricots (they cost me $1.69!)

 

~Washed them

 

~Took out the pits

 

~Cut them into fourths

 

~Put them in a pan on the stove

 

~Squeezed the juice of one lemon over apricots

 

~Add sweetener if desired. (depends on the sweetness of your fruit.  I added 3 Tbs of pure cane sugar)

 

~Cooked on medium heat for 10-15 minutes, smashing them and stirring once in awhile. 

 

~Put cooked apricots into my food processor (I’m sure you could use a blender)

 

~Pureed them until smooth- it looks like baby food

 

~Spread them out on freezer paper on top of a cookie sheet (can use waxed paper) (**see below for thickness comment)

 

~Put them in the oven for about *4-5 hours (150 degrees is recommended, the lowest my oven went was 170 degrees)

 

~Took them out, let them cool 

 

~Cut them into strips and rolled em’ up

 

~Stored in a mason jar.  (or Ziplock bag or any airtight container)

*I put them in the oven after dinner and took them out right before I went to bed.  I let them sit out on the counter all night, then cut and rolled in the morning.  

 

**The only thing I would do different is spread my pureed apricots just a tad bit thicker next time.  I think it would work better for me since my oven’s lowest temperature is 170 degrees.  It was harder to get the paper off at the thin edges, which is where you need it to be the easiest!  Other than the thinner edges, these turned out perfect, I just had to cut about an inch off all around where it was too thin–such a waste!

 

I am eager to experiment with these.  I want to try a batch with no added sugar and see what it does.  I’m sure the amount of sweetener will depend on personal tastes and how sweet your fruit is. I personally liked that our apricot fruit roll ups were a bit tart, so I will avoid the sugar as much as possible. I can’t wait to use different kinds of fruits, I have a ton of pureed strawberries (thanks to this fun day) in my freezer, so next will be strawberry fruit roll ups!  I let you know how it goes.

Butterscotch Bars For Father’s Day

Butterscotch Bars–
5 ingredients.
5 minutes to make.
25 minutes to bake.
=35 minutes for a simple, thoughtful and yummy Father’s Day gift.

My father-in-law loves Oatmeal Scotchies (ya know, the oatmeal cookies with the butterscotch chips in them?).  They are super good, but he is pretty health conscious, so I thought I would try something a bit different with healthful ingredients in mind, but still with a buttery, butterscotch flavor.  I’ve been eyeing this 5 ingredient recipe for Butterscotch Bars from Heavenly Homemakers for awhile now,  and hoped they would taste as good as she made them sound.  Well, of course they do–after all, it is a Heavenly Homemakers recipe, and she never disappoints.

Now, when I say healthful, I do not mean eat- a-whole-pan-in-one-sitting kind of healthful.  They do have a cup of butter in them, so they are not low calorie.  What I mean is that they are made with healthful ingredients that are not artificial, and contain ingredients that are beneficial to the body. (example-fiber from the whole wheat flour, protein from the eggs)

My husband was heading out the door to meet his dad and brother for dinner and a movie, when I stopped him and pleaded for him to wait a few minutes so I could finish up the bars.  I got that look from my husband, the look that said “you know my dad is a stickler for punctuality, please hurry!”  Well, my patient husband waited for me to package these pretty, and in turn was 5 minutes late to dinner on Father’s day.  Oops. 🙁  Hopefully a little package of still-warm-from-the -oven Butterscotch Bars will make it all ok. 🙂  I dearly love my father-in-law, and I am so very thankful for his influence on my husbands life, my life and my children’s lives.  I love you, Don! (I’m smiling.  It is good he does not read my blog, that PDVA -public display of verbal affection-would make him roll his eyes.  You know the type, tries to be grizzly on the outside but everyone knows he is teddy on the inside-love it)

To be quite honest, I am feeling pretty overwhelmed with gratitude on this Father’s Day.  I have been so blessed to have an amazing husband who is such a great dad to our girls, a super loving, giving and involved father-in-law, and my own daddy, whom I know loves me, has done so much for me, and reads my blog despite most of the content being of little interest to a guy like him-now that is love, huh? (miss you dad, hope you are having a GREAT time in Wisconsin!)  I. AM. BLESSED.

On to the recipe…
it is easy and really yummy.  It is bursting with buttery goodness and a bit on the gooey side–yum. I’m wondering if it would be just as good with a little less butter in it.  I may try that next time.

Easy Butterscotch Bars
1 cup butter, melted
11/2 cups sucanat (pure cane sugar)
2 eggs
1 tsp. vanilla
11/2 cups whole wheat flour

Stir butter and sucanat together.  Add eggs and vanilla, mixing well.  Add whole wheat flour and mix until well combined.  Pour batter into a 9×13 inch pan ( I greased mine)  Bake 350 degrees for 25 minutes.

I’ve been on the lookout for a gooey, chewy granola bar recipe. I checked out some of my favorite sites, and I should have known Heavenly Homemaker’s has been on the same hunt. She, too, wanted one with no corn syrup, and of course, she came up with one. It is one I really want to try again so I can do it right and experience her true recipe, but oh my, am I glad I messed it up because the concoction it made was DELISH!

So you can experience both, I will give you my “oh so good, messed up version”, then I will post her chewy granola bar recipe. I’ll try it again soon and can’t wait. I tasted the mixture after adding the oats and before adding the last cup of my “combination” and it was peanut buttery goodness.

Easy Homemade Chocolate Sauce For Ice Cream

 

I’ve given this away as a gift and made it 3 times for my own family.  It is one of those recipes that I  know I will be in the family for a very long time–it is SOOO good.

It is quick, it uses ingredients we usually have on hand, and it tastes WAY better than store bought chocolate sauce.  When I served it to my husband, he just kept grunting and saying “MMM”& “YUM” as he scraped his bowl clean.

I’m surprised he didn’t get his face in it and lick it clean!  Yes, it is that good.

Here is the recipe, it is from recipebzaar.com.  It was recommended by another blog, but I can’t remember which one, which I’m feeling pretty bad about because they deserve a big thanks from me!

 

 

Lee Lee’s Famous Chocolate Sauce For Ice Cream
2 min/1 minute prep time

Serves 4-6

1/2 cup sugar (I use whole cane sugar -rapadura)
2 Tablespoon Cocoa
1/8 tsp Salt
1 1/2-2 Tablespoon Butter
1/4 cup water (more or less, as needed to make a stir-able consistency)
1/4 tsp vanilla extract (can’t beat 100% pure vanilla extract!)

1. Combine sugar, cocoa, and salt in a small saucepan.
2. Add enough water to make stir-able consistency.
3. Add butter to cocoa mixture.
4. Bring to a boil over medium-high heat, stirring constantly.
5. Allow to boil for 1 minute, stirring.
6. Remove from heat.
7. Add vanilla.
8. Serve warm over ice cream.

Chocolate Mudballs

Well, Laura at “Heavenly Homemakers” has done it again.  She has taken a simple recipe, used whole ingredients, and provided my recipe box with one more “make often” recipe.

These chocolate mudballs just hit the spot!  They are great when you are wanting a bit of a chocolate treat, but use ingredients like wheat germ and oats to make them a treat that has some health benefits.  Love that!

I whipped them up in literally minutes, right before I left for my Tuesday Night Women’s Bible study group.  These women are often my taste testers with new recipes, I love their honesty and can count of the variety of tastes in the room to know whether or not a recipe is blog worthy! (I made bars that resembled bird seed one week and we all wondered if the birds would even eat them…they were NOT good:) These little mudballs received rave reviews, so here they are!

 

Mudballs
1/4 cup peanut butter
1/4 cup honey
1/4 cup wheat germ
1/2 cup oatmeal
1/4 cup 
chocolate chips 
1/4 cup sesame seeds
Cook the peanut butter on honey over low heat until melted. Add remaining ingredients. When cool enough to handle roll into oohey gooey mud balls.
This batch made 12 balls, next time I will double the recipe.
My girls loved these.  They felt like they were eating cookie dough, and were disappointed that we had to share with my group!  I made them yesterday, and plan on going to the store for more sesame seeds so I can make them again today.  
I had a reader send me a recipe she thought I would like (how sweet is that?) and she was right on.  They are balls that are just like these, with just a couple ingredients switched up- they use ground flax seed instead of wheat germ, so it would be a great way to get those Omega 3’s!  Here is the link to that recipe if you want to check it out, the link will take you to a Disney website.  I will let you know when I make them how they turn out.

Whole Wheat Brownies

Boy, oh boy I’m excited about this recipe. I found it at Heavenly Homemakers. I have made it 3 times in that last 3 weeks:). It truly is just as easy for me to make as a boxed brownie mix, and tastes very good! I love that it is made with just a few ingredients that I feel good about feeding my family.
Why do I consider these healthy? They are made with whole foods- there is nothing artificial in them. They should still be eaten in moderation (don’t consume the whole pan in one sitting:)), because they are not low calorie, but DO feel good about feeding them to your family because the ingredients in them provide nutrients that benefit the body, instead of harming it.
I am a firm believer that even treats can be beneficial. When it comes to foods in my home, I do not want my family consuming EMPTY calories. I want to be purposeful in making foods that will do the body some “good.” These brownies are an example of that.
Here are a few of the good things that are in this recipe:


  • Whole wheat flour- provides maganese, dietary fiber, tryptophan, magnesium, vitamins B1, B2, B3, E, folic acid, calcium, phosphorus, zinc, copper, and iron.
  • Eggs- source of protein
  • Butter-vitamins A, E, K and D, anti-oxidants, and selenium.(post coming soon on why I am at peace about eating butter, despite the saturated fat)
  • Cocoa-antioxidants (flavanols)
  • Rapadura-used in place of white processed sugar. Rapadura is the pure juice extracted from the sugar cane and evaporated to dry it into granules. Low heat is used so vitamins and minerals are retained. It has a natural balance of sucrose, glucose and fructose. Your body metabolizes it more slowly than white sugar, so it will not affect your blood sugar levels as much as refined sugars, so no crazy sugar rush! Remember, the more refined the sugar, the more it raises your blood sugar. Rapadura can be found at your local health food store. I use it in many baked goods in place of white sugar. If I were to buy boxed brownies from the store, they would be made with white refined flour (the processing removes nutrients, vitamins and fiber), white processed sugar (empty calories, makes blood sugar spike), and oils. Not to mention anti-caking ingredients and preservatives. I think making them homemade takes little extra time with a whole lot of benefit!
If you still are set on buying boxed, Hodgson Mill Brownie Mix is a brand I highly recommend and have used. They are yummy! The ingredient list is: Turbinado sugar, whole wheat pastry flour, cocoa, milled flax seed, salt. Now that is what I’m talking about!!
If you go to Heavenly Homemakers website, she shows you how to make homemade chocolate chips to put into these brownies. I am so not there when it comes to being motivated to do that, maybe someday. I use some AMAZING milk chocolate chips from my local health food market. I like the ingredients they choose to use in them, ones I know and trust. They are on the pricey side, so that may get me motivated to make my own!

Whole Wheat Brownies
1 stick of butter, melted
1 cup rapadura
1/4 cup cocoa powder
1 egg
1 t. vanilla
3/4 cup whole wheat flour
1/2 cup chocolate chips
Stir together butter, rapadura and cocoa. Mix in egg and vanilla. Stir in flour and mix until combined. Fold in chocolate chips.
Pour into 8×8 pan. Bake at 350 degrees for 20 minutes, or until toothpick in center comes out clean.

I recently tried these out on some extended family members that were a bit apprehensive about the word healthy and brownie in the same sentence. I am pleased to announce they liked them! Pleased, but not surprised..

Christmas Cranberry Recipes/ Christmas Carnival

Today I am participating in “Healthy Holiday Eats and Sweets Carnival”, hosted by “Keeper Of The Home.”(check out this blog, its a good one!  I have learned so much from it!)  I am very excited to find some new, healthy holiday recipes for years to come.  I plan on making a Healthy Holiday Recipe Journal with the carnival recipes, as I know there will be lots of great ones!!

I love all things cranberry, especially around the holiday season.  I thought for the carnival, I would share a couple of my favorites with you!

Hot Buttered Cranberry Apple Cider
1/2 cup unsalted butter, softened
1/2 cup rapadura or brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
pinch of cloves
pinch of salt
cranberry juice
apple cider

In a bowl, cream all ingredients except the juice and cider together.
Place on a piece of waxed paper, wrap up and put in a ziplock bag.
Freeze.  Slice pieces off as needed.

Heat 1/2 cup cranberry juice and 1/2 cup apple cider.  In the bottom of a mug, add at least a Tbls of the spiced butter.  Pour heated juice/cider mixture over the butter, stir and enjoy!

This next recipe is one that is pretty addicting.  I may make a large batch for Christmas gifts this year.  It is a recipe from FamiyFun.com, but I substituted almonds for walnuts.

Tree-Trim Cranberry Trail Mix
8 cups freshly popped corn (see this post for easy popping instructions!)
1 cup almonds
1/3 cup maple syrup
1/4 tsp cinnamon
1/2 tsp kosher salt
pinch of baking soda
1 cup dried cranberries

Heat the oven to 300 degrees.  Grease a large, rimmed baking sheet.  Mix the popcorn and nuts in a large, well -oiled bowl.  Bring the syrup, cinnamon, and salt to a boil in a small pan on med heat.  Let the mixture boil for 4 minutes, swirling the pan once in awhile.  Turn off heat and add the baking soda, stirring until the mixture is creamy.  Pour the mixture over popcorn and stir well.  Spread the popcorn on the baking sheet and bake until it is dry to the touch, about 15 minutes.  Let the popcorn cool for 20 minutes, then mix in the cranberries and serve or put in jars for yummy gifts!
