DIY Coconut Butter

Who doesn’t love coconut butter? It Is rich, decadent & delicious.

Are you one of those people spending a fortune on gourmet brand coconut butter?  Then let me show you how you can save yourself a fortune and make your own in under a minute or so for under $4.00!
 
WHAT YOU NEED
 
All you are going to need is a high speed blender
3 cups of dried coconut (or more– this will make approximately 1 cup of coconut butter.)
 
HOW TO
 
~Pour at least 3 cups of dried coconut into your high speed blender
~Turn on and start blending. My vitamix blends it down in 30 sec on high speed. 
~Then turn it off for about 20 sec to rest and blend it again for another 30 sec.

Done! Its that easy. Depending on how good your blender is what will determine the time it takes to get the consistency you like. Make sure to give your blender a little rest in between if you feel like its struggling a bit.
 
Now you can pour your coconut butter into a cute little glass bottle and store in the fridge or in your cupboard depending on how hot it is at your place.

Or… you can do what I love to do and pour it into cute little chocolate moulds and keep them in the freezer. I eat them striaght from the freezer, just like a little white chocolate treat.

No guilt, all I’m eating is coconut. Delicious, good- for- you healthy fat. Remember, good-quality healthy fats are nothing to be afraid of.

Spiralize Your Vegetables

We have had so much fun with our Vegetable Spiralizer!  We have had it now for almost a year and I can’t tell you how it has transformed the way we eat raw veggies around here.

So often kids won’t eat vegetables because of the shape and texture, so what better way to get them munching than by changing the shape and even the texture of the vegetable?

 

I recently made a fun, spiralized vegetable lunch for my girls.  I spiralized carrots, sweet potatoes, and cucumber.  I cut up some strawberries and made a quick egg salad for egg salad sandwiches.

I even reheated some beans from our dinner the night before.  We try to eat the rainbow as much as possible, to get in as many phytonutrients and antioxidants as possible, and this colorful lunch had us doing just that.

My Avery loved that I made a fun face for her lunch, it brought on the smiles.

Eating vegetables in their raw state is much more healthful than cooked– in most cases.  I have found that certain vegetables are more appealing for my kids palate if they are in fun shapes and set out in bowls, ready to eat.

 

Leftover spiralized veggies are great on salads or in wraps.

 

You can turn raw zucchini into pasta.  Top with tomato sauce.

 

The back of the box shows you the many ways you can use the spiralizer.  It is really easy to use and super easy to clean.

My sweet friend Erin from Home With The Boys recently put a picture up on her Instagram that caught my eye.  She has the same spiralizer and turned her sweet potato into spirals.
She then tossed them in a little olive oil, sprinkled a bit of salt, and baked at 400 degrees for 25-30 minutes, or until brown and crispy.
They looked delicious! The above is the ‘before’ picture. We have spiralized our sweet potatoes and eaten them raw, but have yet to try them baked.

She Makes Hats + Book Giveaway!

My name is Robyn, and I make hats. I make hats on repeat, at least one hat-in-progress always on my knitting needles, piles of finished hats on our desk, our dining room table, and in bins waiting to be donated. Almost every hat I make is given away to someone in need, with the remaining few given to friends and family. It’s a compulsion, some might even say an obsession – I simply keep knitting.

I share hat patterns, charities that accept finished hats, and share some of the tips and tricks I’ve picked up along the way.

People often ask me, why hats? The short answer is hats are simple — they take just one skein of yarn, can be carried with you wherever you go, and don’t need any special measurements.

Most people’s heads fall under one of three or four sizes (baby, child, smaller adult, larger adult) so you can be fairly certain the hat you’ve made will fit one of these four sizes of person depending on the number of stitches on your needle.

Hats can do quite a bit to keep a person warm. Little babies have a hard time regulating their temperature, so a hat can mean the difference between health and sickness. For folks living on the street, a hat can help stave off sickness in the coldest of temperatures. Naval ships run cold so a hat can help keep soldiers warm while on and off duty. For folks dealing with a wide variety of illnesses, a hat can not only help keep them warm through treatments, but can be a reminder that they are still seen and valued as more than their diagnosis.

I made the Citrus Carpet Freshener recipe, and oh MY it smelled so good in here after vacuuming.  I put the recipe in the above shaker jar, marked it with cute  washi tape, and now I look forward to vacuuming again.  Only Clean Mama can make THAT happen.  I am going to use the second jar with the pour-flap lid to make Lemon & Clove Nightly Sink scrub. Arroz Con Dulce – A Sweet, Sticky, Coconut Rice Treat from Puerto Rico

It is getting warmer here in the Midwest, summer is coming, and I have been dreaming of a vacation somewhere with a beach…specifically I’ve been DREAMING OF PUERTO RICO!
I’ve been watching some amazing videos about Puerto Rico. Puerto Rico Tourism recently partnered with popular Trip Advisor to transform real traveler 5-star reviews into stunning short films. These short films are narrated by Puerto Rican stars, and has helped me realize that Puerto Rico is filled with world-class attractions that will turn any trip into a 5-star vacation story! I want to go!
Just watch the above video to see the beautiful El Yunque National Forest.  I sat and stared wide-eyed at that waterfall.  This is the only rainforest under US national park service.
A few other reasons I’m dreaming of Puerto Rico & what I would do there:
~Flamenco Beach in Culebra, cited as one of the best beaches in the world.
~I want to glow like and angel in the water in the Bioluminescent bays.  
~I’d visit San Juan and enjoy its old world charm.
~The foodie in me would love to explore some of Puerto Rico’s delicacies.
Speaking of Puerto Rican food, I thought it would be fun to experience some authentic Puerto Rican food. I’m hoping that giving my family a taste of what we would eat there will get us all dreaming.  A bit manipulative, yes, but a great way to introduce my family to the place I want to go and get us all on the same page. {wink}
I explored the internet and found this recipe for Arroz Con Dulce from the Noshery.  It is “basically translates to rice candy. It is a sticky, coconut sweet rice treat with cinnamon and raisins tossed in. It is delicious, sweet and sticky.”  It is the perfect recipe to lure my family into falling in love with the flavors of Puerto Rico.  
Puerto Rico is also knows for their Rum.  Of course I had to find a fun Puerto Rican rum drink recipe, and I found a Mojito drink that is light, refreshing and full of mint flavor.  I’m gonna sip and dream of being at the beach in Puerto Rico. 

Mojito Diego
2 ounces Puerto Rican rum
Mint leaves
Splash of simple syrup
2 small lime wedges.
club soda
Instructions:
Muddle mint, simple syrup and lime wedges in a tall pint glass. Add rum. Add ice. Fill glass with club soda. Shake once to mix.

One last HUGE reason that I would choose to visit Puerto Rico over any other tropical place is that there is no need for Passports or foreign money!  We would just hop on a plane and go. I think this reason alone would get my very practical and efficient husband on board…hopefully on board that plane!
