Just yesterday I posted an article on NN’s FB page, written by Danielle Angel via Active Beat, called “10 Worst Breakfasts To Feed Your Child.”  It was an interesting and eye opening article, and one I decided to show my 13 year old who has been begging me for a certain chocolate nut spread that “every other family but ours” gets to eat!  The article said it is full of sugar and fat.  Now personally, I do not mind the fat, because it is a healthy fat from nuts, (although it does contain palm oil, too) but I DO mind the sugar.

Some of my readers commented that they have seen recipes for this certain chocolate nut spread floating around on Pinterest, and then Jen from De Jong Dream House most graciously shared her recipe with us on the comment feed.  I was so excited about it that I asked if I could share it with you all!

Jen’s husband Niels is a Dutch citizen, and she jokes that for the sake of her marriage, Nutella is a mainstay in their home.  She says the “Dutchies” also put chocolate sprinkles on their sandwiches!  Sounds like a fun bunch to me!

She also shares that her son has a milk allergy, so she came up with a sugar free, dairy free version of Nutella.

I can’t wait to show my daughter that we can make our own healthy version!

Apricot Banana Oat Bites – Only 5 Ingredients, No Sugar

 If you are not an oat lover or banana lover, then I wonder if my blog frustrates you…because boy do I make a lot of things with oats and bananas.  They are two of my favorite foods & I eat them both daily. Thanks for sticking with me, those who do not care for oats and bananas!

I’ve posted a version of this recipe before, but I had to share THIS version of them.  Adding one special ingredient took these cookies to a whole different level.  Guess what that was?  DRIED APRICOTS.

These cookies are sweet despite having no sugar in them, but they are made super special with the sweet addition of apricots.  My girls loved that I let them have cookies for breakfast.  Yes, these cookies are that healthy!

 

I love these little cookie bites.

Why?

~I always have the ingredients on hand

~They are easy!

~They are healthy—bananas and oats!!

~They have no added sugar

~They are not overly sweet

~They fill little tummies

~The are great for snacks, breakfast and packed in lunches

~They make our home smell like I’ve been baking banana bread all day

~The oil I use is coconut oil, which I believe is very beneficial to our bodies.

~My kids beg me for them

Ingredients for apricot banana oat bites
Apricot banana oat bites mixture

 

Apricot Banana Oat Bites

(inspired by Banana Cookies @ MissionBFit)


3 ripe bananas

2 cups rolled oats 

1/3 cup oil  (I use 1/4 c. coconut oil plus water to make 1/3 c.)

1 cup dried apricots, cut into bite sized pieces

1 tsp vanilla

The Directions:

 

~Mash bananas

 

~Stir in oil & vanilla

 

~Add oats & apricots. Let the mixture sit for 10 minutes, this softens the oats.

 

~Drop by teaspoon on to ungreased cookie sheet.  

 

~Bake at 350 degrees for 10-15 minutes.  Do not over bake.  They will be like a soft granola bite.  

~Store in a covered container.

I left them out on the counter overnight on accident but ended up loving that they hardened up a bit and were perfect sprinkled on my oatmeal, sort of like crumbly granola topping.

No Bake High Raw Oatmeal Banana Balls + Our New Raw Foods Contributor

We are thrilled to be welcoming Teniel Moore as our new Raw Foods Contributor here at New Nostalgia.  Teniel will be here one Saturday a month sharing her love and knowledge of Raw Foods.

I have been seeking a 4th Saturday Contributor and Teniel is the perfect fit.  I am so intrigued by raw food recipes and have been incorporating them into our diet a couple times a week.  I got to know Teniel through Instagram, her photos of mouth watering raw foods made me a huge fan.  I also love following Addicted To Raw on Facebook, where she posts her recipes.

I recently had a Q&A session with Teniel about her Raw Foods diet.  I sure would have loved to have done it in person, but Teniel is from Australia so that would have been a bit hard!  Maybe someday I will get to visit her in person…how great would that be?

Q & A with Teniel from Addicted To Raw:
When did you start having an interest in raw foods?
I started looking into raw foods nearly 2 years ago. I knew I needed to change the way I was eating. I exercised all the time but still made bad food choices.
 I first heard about a 14 day green smoothie challenge. Which I completed and I have never looked back since. 
Why do you believe raw is the best way for you to eat?

I chose to eat mainly raw as I have found it to be the best way to nourish my body and feed it a huge amount of living foods.
It has given me an absolute love for fresh fruits and vegetables and has helped me maintain my weight and keep me regular.
I find it simple fast and fresh, and not in anyway as time consuming as cooking for my family can be.


How much of your diet is raw?
I eat a high raw diet. On average about 90% raw. Of course some days are more and some days are less. 
Does your whole family eat raw?

 I have a husband and 3 kids. My kids are twenty two, six and four. My eldest son who is twenty two does not live at home anymore. My family do not eat a raw diet. However our whole families
diet has changed dramatically since I started eating raw. My kids are aware of how healthy I eat and they often like to copy me. Snacks have become based all around whole foods and lots of foods like raw cookies, kale chips and fruit leathers instead of lots of packaged foods. I cook food for them but its based around whole foods. To me being a good example is the best thing I can do. 
Have you always liked fruits and vegetables or was it an acquired taste for you?
 I never had a strong dislike for fruits or vegetables, but I used to find it very hard to get my basic serve of vegetables into my diet every day. It was a real struggle. 
Breakfast was always multi grain toast with honey or jam with a coffee or sometimes oats. Lunch was always on the go and it would be a milk based coffee drink with maybe a fruit bun or some fresh fruit. If I was at home I’d just grab a bowl of cereal. Dinner usually had some vegetables in it along with some meat or fish. 
So as you can see no where near the amount of fresh fruits and vegetables that our bodies need. Raw food has given me a genuine love for fresh fruits and vegetables. I truly love them now and have learned so many ways to make them taste delicious while still keeping them full of goodness.
What are some foods you make sure you eat every day?
Greens greens and more greens. I have to eat greens every day. I believe they are so good for us. I get these greens through a green juice or smoothie and salads.
What is a go to breakfast for you?
A green juice or green smoothie.
What is a go to lunch for you?
A smoothie. This smoothie is often a more indulgent smoothie. Often made from almond milk, frozen fruit and some cacao powder. Or a chia seed cereal with fresh fruits and sometimes a delicious flax cracker with some veggies and sauerkraut.

What is a go to snack for you?

I am big on snacks. I look forward to them. My go to snack is always some type of goodie/energy ball or oat cookie that I have made. Sometimes just a beautiful crisp organic apple with a nut butter. 
Is eating raw hard on the budget?
Eating raw can be expensive. I try to buy about 80% of my food organic. With a family of 4 at home that can be very expensive. I buy most of my fresh vegetables at a local
organic market every Sunday. It’s much cheaper and of course fresher than the supermarkets. Its really about shopping smarter and planning ahead. And of course knowing your prices and buying whats in season.
Do you ever miss cooked foods? 

Yes and No. You see I still eat some cooked food. I am not 100% raw and are not really striving to be 100%. I enjoy some cooked quiona at least once a week. Would be happy to eat some cooked beans or baked vegetables. But for the most part I just make my salad for dinner and find I am very content with it. 
Do you ever do juice fasts? Why?
I do love a little juice fast. I did my first juice fast in October 2012. This was a 7 day juice only fast. I did this fast to see what a juice fast was like and too give my digestion a break. After doing that fast I made a commitment to myself that at the beginning of every month I  would do a 2 day mini juice fast. I love the discipline that comes with fasting and each month it serves as a reminder to me to be more mindful of what food I should be eating and how much food I really only need.
How do you feel during a juice fast? After?

My diet going into a fast is pretty good. Not perfect but certainly not the SAD diet I used to have. So I find I do not have many strong detox symptoms. However I do not
do extended juice fasts. Maybe I would see a different result if I did longer than 7 days. I might get a slight headache and some puffy eyes. But other than that nothing. I also have to cut back on my running for that week and take it a bit easier.
After a juice fast I feel a great sense of accomplishment and feel proud that I disciplined myself to not eat and give my digestion a break. Of course I feel lighter and enjoy the feeling my body has only been feed 100% raw organic juice.

No sugar no bake high raw oatmeal banana bites

No Bake High Raw Oatmeal Banana Bites 
from Teniel @Addicted To Raw
1/4 cup sultans (raisins)
1 cup almonds
1/2 cup coconut
1/2 cup-1cup dates
3 cups oats
1 banana
3 tsp honey
Process almonds in food processor until a little texture is still left  Add your dates and raisins and mix well, still leaving some bits visible.  Add one cup of oats and mix, then add banana & process again.  Now add coconut and the rest of the oats along with the honey.  Process.  Add a drizzle of water to help moisten the mix if needed.  You want the mixture to have a consistency that makes it easy to form into balls, so add water if it is too crumbly.  Store in refrigerator.

My girls come home from their Grandma’s raving about Grandma’s blueberry muffins and begging me to make them.  Grandma’s muffins are from a mix, so I’ve had it in the back of my brain to find a hearty, healthy blueberry muffin that my kids will love just as much as they love Grandma’s blueberry muffins.
Well, guess what?

We had 2 snow days last week, and having my girls home from school with snow falling outside always puts me in the mood to bake. I scoured the web and my bread/muffins pinterest board for a healthy, hearty blueberry muffin recipe and found this one from Heavenly Homemakers.

I kept the recipe pretty close to the original, but I used oatmeal instead of nuts for the streusel topping.  My youngest girl does not like nuts.

These muffins were really delicious.  They are moist and filling.  They do not have too much sugar, and the streusel topping gives it just enough sweetness.  I doubled the recipe and they were still gone within 2 days!

Blueberry Streusel Muffins

1 1/2 cups whole wheat flour
1/3 cup brown sugar (or coconut palm sugar, or sucanat, or honey)
1/2 teaspoon baking powder
1/4 teaspoon sea salt
1 egg (or chia egg substitute)
1/4 cup melted butter (I used coconut oil)
3/4 cup milk (I used almond milk)
3/4 cup blueberries, fresh or frozen


Mix dry ingredients together well.  Add egg, butter and milk, stirring until all ingredients are mixed.  Gently stir in blueberries.  Scoop batter into 12 paper lined muffin tins.  Sprinkle with Streusel Topping and bake in a 400° for 20 minutes.

Streusel Topping:

3 T. brown sugar (or coconut palm sugar, or sucanat, or honey)
1 T. butter, softened (or coconut oil)
2 T. oats (or chopped nuts)

Raw Raspberry Bliss Bars

My local health food co-op just recently started a YouTube channel/site called Starting Out Raw.  I have been enjoying the different recipes they post and I REALLY enjoy that I can get all ingredients just down the road at Open Harvest.

I have been intrigued by the whole ‘raw food’ movement.  It makes sense to me that many foods are MOST nutritious when consumed whole and raw. Heat can destroy many of the nutrients found in food. I also love the idea of having some recipes in my box that do not take any cooking or baking!  I have been really surprised at how easy and delicious raw recipes can be.

This recipe for Raw Raspberry Bliss Bars is REALLY really good.  I was not sure if my family would eat them because my girls do not like coconut, walnuts or dates.  But when you throw these ingredients together into a food processor…MAGIC HAPPENS!  You know when I keep capitalizing my letters that I’m a bit EXCITED about this recipe.  I have made it twice in a week, due to my kids begging for more.

 
These bars are high in Omega’s thanks to the chia and walnuts.  The raspberries have great antioxidants and the dates add a beautiful sweetness that makes one completely in awe that these bars are sugar-free. They are a decadent treat, one that I love eating with a cup of coffee, but they are full of ingredients that are very good for you, and can even be eaten as part of breakfast guilt-free!

TRY THESE.  You will love them.  Even if you are not a coconut fan, or a date fan or a walnut fan…I think you will still love them!

Start by defrosting your raspberries, so they will be ready to go when you are.

Throw coconut, vanilla, cinnamon, & salt into the food processor.  Process for about a minute.  I did two…my littles like the coconut chopped so small that it is unrecognizable.

Take the lid off and inhale the amazing aroma…smells so good!

Add walnuts and process.  Process extra if you are trying to disguise the nuts like I was.  I let Lil’ One fall in love with these bars before telling her they had nuts AND coconut in them.

Add 8 pitted dates.  Don’t forget the PITTED part!  The first time I ever used dates in a recipe I forgot to pit them and I about broke my food processor.
After my Lil’ One fell in love with these bars, she wanted to help me make more.  When we got to this part she said “Ew.  Those dates look like bugs”.  She’s got a point….

After processing with the dates, this is what the mixture will look like.  Perfect consistency to press into a lined pan.

Your raspberries should be defrosted by now.  The recipe says to drain them, but I never do.  They are such a beautiful color, aren’t they?

Process raspberries with 4 dates.

Add chia seeds and set aside.  The chia will make the raspberries gel up into a beautiful & healthy raspberry jam.  Set aside for 15 minutes to gel.

Meanwhile, make the crumble topping. Grab the coconut and measure 1/3 cup.  Throw in the processor with 1/3 cup of walnuts.  Add a pinch of sea salt and a pinch of cinnamon.

Pulse ingredients together until a crumble is formed.

Gather your crust and your raspberry/chia mixture.

Plop the gelled raspberries onto the crust.

Spread out nice and evenly.

 Top with crumble mixture.  Refrigerate until firm & enjoy!

Raw Raspberry Bliss Bars

Base Layer:
1 cup dried coconut
1/2 tsp vanilla
1/2 tsp cinnamon
pinch of sea salt
1 cup walnuts
8 Medjool dates pitted

Blend coconut, vanilla, cinnamon & sea salt together in a food processor for 30-60 seconds.
Add walnuts.  Blend.  Then add in 8 pitted Medjool dates. Blend well.

Press mixture in a wax paper/parchment paper lined 8×8 square pan.  Set in fridge to firm up.

Raspberry Layer:
1 1/2 cups frozen raspberries, thawed, drained
4 Medjool dates, pitted
1 1/2 Tbsp chia seeds

Blend only raspberries and dates until dates are well combined.  Pour into a bowl, and stir in chia seeds.  Let set for 15 minutes.  It will thicken into a nice raspberry “jam”.  Spread over the base layer.

Topping:
1/3 cup dried coconut
1/3 cup walnuts
pinch cinnamon
pinch sea salt

Pulse topping ingredients together until a nice crumble is formed.  Sprinkle over raspberry layer.  Set in fridge to firm up.

Football Funky Fritos And Rubbermaid From Target

 I know, I know.  This is not the usual type of recipe I post here at New Nostalgia.  There is nothing real or healthy about these Football Funky Fritos–AT ALL!  But, sometimes you gotta break the healthy rules and make something junky–especially when it is football season and time for a party! 
I started making this recipe about 4 years ago.  It is one of my most favorite snacks to take to a football party & with the Super Bowl game coming up I thought it was a good time to share it again with you.  Everyone seems a bit skeptical of this snack at first, it does look a bit funky after all, but I always leave with an empty container.
Speaking of containers, you all know I love my mason jars, but they just are not practical for taking along to parties.  Enter Rubbermaid Take Alongs.  I love having a few of these Rubbermaid Take Alongs on hand.  They come in all shapes and sizes, but I tend to stick with the large bowls.  I love them for taking along my favorite chili, my famous cranberry spinach salad, or when nothing but a sweet will do, these Funky Fritos.

When I put the lid on,  I can hear a “click” when sealed.  Such a reassuring sound! The lids also stack nicely, is always good.  The measuring marks I’m sure will come in handy sometime.  What I like most of all, though, is that I can be forgetful.  If I happen to leave my dish at a party, that is ok!  Then the hostess can wash and reuse it and take it along to another party.

Salty Sweet Peanut Butter Caramel Funky Fritos

1 cup white corn syrup
1 cup white sugar
1 cup peanut butter
1 10.5 ounce bag Fritos

M&M Candies 

Pour out the Fritos on a large shallow pan lined with parchment…might want to grease the parchment paper as some had trouble with sticking. Combine the corn syrup and sugar and bring to a boil. Turn down heat and simmer until sugar is dissolved, just a few minutes.  Stir in the PB til smooth. Pour the mixture over the chips, sprinkle with candies, and chill for about 30-60 minutes. Break apart and enjoy!

Andes Chocolate Mint Cookies – A Christmas Tradition

It is the week before Christmas, and it seems like sugar is merrily making its way into our home!  My little 9 year old has discovered a love for making recipes, which has been a load of fun. I’m eager to steer her toward more healthful recipes come the first of the year!

This awesome Andes Mint Cookie recipe is one that I make every year at Christmastime. It is so easy, and has 2 of my favorite holiday flavors, chocolate and mint!  They are simple, pretty and oh so yum.   I double or triple the batch, make a bunch of balls and freeze them until needed.  I love the ease of baking just a few, right before heading out to our different Christmas celebrations.  I also love that I have them in the freezer just in case a friend pops by, it is fun to have a little treat to bake at a moments notice!

Andes Chocolate Mint Cookies
1 box Devils Food Cake Mix
2 eggs
1/2 cup oil
Andes mints, unwrapped and cut in half

~Dump all into a large bowl, beat until combined.
~Roll into one inch balls.  (I just use a pampered chef small scoop and skip the rolling)
~Bake @ 350 for 6-7 minutes. (Don’t over bake, you want them soft.)
~Immediately, push an andes mint gently down in the center of each cookie.
~Wait a minute or so, until the top of the mint turns melted and shiny, then take a toothpick or tip of a knife and swirl the melted mint into a circle, creating swirly beauty. (my girls love doing this part)
~Let cool so the chocolate will set before putting on a platter.
