The Beauty of Egg, Avocado, and Spinach

I posted the above Egg, Avocado and Spinach breakfast photo on Instagram, and it got lots of attention!

Maybe it is all of the beautiful colors in this ‘easy-but-looks-fancy’ dish. They really are quite beautiful; the dark green of the wilted spinach against the shiny cooked egg white and sunny yellow of the egg.

A sprinkling of seeds in all the neutral colors doesn’t hurt, either. Such a pretty dish! All those colors represent different textures, which make this dish very satisfying!

It can be served right on top of a piece of toast, or to the side if you prefer.

Trying to stay away from bread? Forget the toast and serve with fruit or slices of tomato.

It may look fancy and special, but it really takes just minutes to make and can be served for breakfast or dinner.

Better yet, make it for a sweet friend for brunch. That is how I was first introduced to it.

My First Taste of Egg, Spinach & Avocado Breakfast

The first time I had it, my Karen friend from Cali made it for me. There is nothing quite like sitting in her kitchen with a cup of coffee and being served by my heart friend!

I talk a bit about how we met in this post–another easy, healthy breakfast introduced to me by my Karen!

She commented on my Egg, Spinach and Avocado Instagram post and said hers looked nothing like mine but I disagree.

The only difference was I fanned my avocado and added a sprinkle of Trader Joes “Everything But the Bagel” seasoning.

These simple things do make for a beautiful dish, but Karen’s was just as beautiful and is responsible for teaching me how to wilt down my spinach and nestle an egg right into it and top with avocado.

I get to visit her and her husband again in October and I just cannot wait!

It looks fancy, tastes delicious, but takes just minutes to make. Avocado, egg, and spinach contain so many good nutrients for the body and is quite filling! Make this for breakfast, dinner or have a friend for brunch and serve them this beautiful dish.

  1. Heat a small pan (I use a 6 inch cast iron skillet) with a bit of butter or oil of choice on medium heat. Grass-fed Kerry Gold Butter is my choice! Mmmm.

  2. Add a generous handful of fresh organic baby spinach. Let it wilt down a bit.

Cook Egg
  1. Push spinach to the outside of the pan, and add egg to the center of the pan. Important! You want to make sure the egg is touching the spinach, so they become one.

  2. Season with salt and pepper

  3. To cook the top of the egg, add a lid. The steam will cook the top. You decide how you want the yolk cooked. I like mine cooked through so I usually poke it at this point and let the yolk run all over. Need more steam? Add a teaspoon of water to pan then quickly put on the lid.

Slice Avocado & Make Toast
  1. Meanwhile, slice an avocado. Make some toast if desired. 

  2. Slide spinach and egg onto a plate, and serve toast alongside OR serve the spinach and egg right on top of the toast.

  3. Top egg with fanned avocado slices. 

  4. Sprinkle with "Everything-But-The-Bagel Seasoning from TraderJoes. If you don't have a Trader Joes nearby, sprinkle with sesame seeds, onion flakes, garlic powder and salt.
