I have so enjoyed my herbs in our Square Foot Garden this year.  I have been using them like crazy and   it makes me feel very Martha Stewart!  I bought transplants of all of the herbs this year. Dill, Rosemary, Parsley & Basil. The Mel’s Mix soil mix I use in my garden sure makes my herbs grow like crazy.  They really are no work other than watering every few days and pinching off the flowers to encourage leaf growth/spread.

I have especially loved throwing parsley into my green smoothies or juicing it.  I grew both flat leaf parsley and curly.  The flat leaf seems to be most happy & that has made me happy! Parsley is a very cleansing a detoxifying herb, and I use it in almost every dinner dish I make.

My rosemary is also growing happily. It is such an earthy and beautiful herb.  We love it on roasted vegetables, especially roasted potatoes.

 I grow a lot of basil every year.  I use it in my simple spaghetti sauce, to make pesto, and my favorite…tomatoes on toast ,which is an easy version of bruschetta.  I also use it in creamy avocado dip, which is a $100 prize winning recipe, thanks to a contest I won with Avocados From Mexico.

 Dill is one of my most favorite herbs.  I use dill on roasted potatoes and in quiche.

Square Foot Garden Progress & What To Do With All Those Tomatoes!

Square foot gardening is one of the BEST projects I have ever done.  I cannot tell you how much joy it is to grow fresh herbs and vegetables with minimal amount of work!  I have two, 4×2 feet garden beds along the side of my home.  It is the only place other than our front yard that gets enough sun, so we were limited, but thanks to square foot gardening I can still grow an abundance of organic food for our family!
I built these beds 3 years ago, other than the initial work of building the beds and mixing “Mel’s Mix” (the KEY to square foot gardening & my gardening success), square foot gardening is one of the easiest things I have done.  There is next to NO weeding.  Watering is minimal as the Mel’s soil mix absorbs and retains moisture, and the only thing I do each season is add one bag of compost to each bed at before planting.

Impressive results, huh?  Every year the garden has performed beautifully and I have just had a ball with it.  Right now I am harvesting the sweetest tomatoes, lots of herbs, and patty pan squash.  My banana peppers are about a week away from harvest. I will be going to my local garden center and buying some kale starter plants for a cool fall harvest, as we live in Nebraska and the time is right.

I’ve been eating tomato sandwiches, making fresh marina sauce, and eating lots of tomatoes on toast (my version of bruschetta.)  I even have enough to share with neighbors.  I’ve just started a Tomatoes! board on Pinterest that has lots of great ideas, so check that out if you, too, have an abundance of tomatoes.

In this bed I have 4 tomato plants, 5 pepper plants, and a squash.  Not bad for such a little space, huh?

My Avery was excited about this Patty Pan Squash plant.  They look like little flying saucers! She has delighted in watching it grow.

Just 3 short weeks ago this squash plant was tiny with just a few little leaves.  Now the leaves are as big as my head!

We eat a lot of bell peppers around here, so seeing the pepper plants flower makes me anticipate a great crop.

In my second bed, I have 2 types of lettuce, which is ready to harvest and will be replaced with swiss chard.  I love using these greens in my green smoothies or juicing them.  I also love going out right before dinner and snipping off a few leaves for a dinner side salad.

My Favorite Funky Plants

I have a thing for funky looking plants.  Especially when they are super easy to take care of!  These are both perennial plants that I put in pots in my backyard.  This is the second year they have come back and I love how easy they are to take care of.  Honestly, I rarely water them, and they do just fine.

I love keeping my pots simple, and I love to show off the shape and texture of funky green perennial plants by planting one per pot and allowing it to have all the attention.  It ends up looking like art to me, I love the shapes and the structure of doing pots this way. It may be the hair stylist in me that is drawn to all that fun texture. It is definitely against the flow of what is popular, but it is easy on the budget and makes me happy!

Here are 3 of my favorites that I use and love:
No ordinary plant, aptly named Corkscrew, has narrow, glossy green, pencil-thin stems that spiral outward from the clump to eight inches in all directions. A great deer-resistant accent plant that collectors dare not do without. This low maintenance plant prefers to be sited in a bog or other very moist environment in partial shade. Reaches eight to fourteen inches tall and eight to ten inches wide.


Care Information
Follow a regular watering schedule during the first growing season to establish a deep, extensive root system. For a neat appearance, remove old foliage before new leaves emerge. Clumps are often slow to establish, but once established will spread by creeping rhizomes.

Unique grasslike plant is ideal for adding texture to mixed containers or marketing as an indoor lifestyle plant. The short, billowing mound of soft green leaves is accented by flower spikes that look like “fiber optic” strands. Easy-to-grow plants make a dense, mounded habit without pinching or PGRs, growing upright as a young plant and then draping as they mature. Performing well in wet conditions, Live Wire is also a good choice for planting alongside ponds and water gardens. Prefers a shady garden location, but can handle sun if moisture level is maintained.

An evergreen arching perennial that has feathery, needle-like, stems. Foxtail Fern is often thought of as a fern but really it is not a true fern, i.e. it produces seeds rather than spores. This “Fern” is however related to the vegetable Asparagus which also has fern-like foliage. Foxtail Fern is very similar to Asparagus Fern only its growth habit is very dense and it produces tail-like fronds for a fluffy “Foxtail” look. In the summer the plant has small white flowers that are followed by bright red berries. The plant can grow 2 feet in height and to a width of 3 to 4 feet. Unique growth habit makes it an outstanding accent plant in any garden also makes a great hanging basket.

Time To Garden!

I started a Square Foot Garden last year and loved every minute of the process.  I am very eager to get out there and plant some seeds, its about that time!  

I will be growing lots of herbs and greens this year.  I have been juicing vegetables for green drinks and it takes quite a bit of kale and spinach, so I will be growing both this year.

Garden Markers

 One of the items I made to sell at the upcoming craft fair are these fun garden markers. I’ve seen them on etsy and wanted my very own. So, I’ve been picking up old vintage, antique silverware at yard sales all summer. Then, I went to the hardware store and bought a set 1/8 inch of alphabet stamps. Got out the trusty hammer and stamped away. You’ve got to have a very hard surface under the spoons…..like the rock in my picture. It’s pretty easy…..the hardest part is finding silver-plated silverware at yard sales. The stainless steel kind is too hard to stamp. Well, it’s too hard for me to stamp. It is possible – I watched my dad do it easily. You have to do the stainless in one strong blow (which is hard for since I am a clutz – I tried and smashed a finger). The silver & silver-plated are forgiving and you can hit it more softly and just hit it a few times – way easier. 


I just think these are so clever and would make a nice gift for pretty much anyone. They don’t even have to be a gardener to like it. As long as they have a plant it would be cute. They can say anything….”live, laugh, love” “you are my sunshine” “i love you” …the possibilities are endless. Cute gift for a co-worker, teacher, stocking stuffer, or even tie it on a bigger gift as the tag. I’ve seen pictures of them being used as table markers for parties, or you can make one for everyone at the party and use it as place cards. I even saw one hammered totally flat and it was used as a cookbook marker. It said something about food on it. I can’t remember exactly….but anything would work. I hope you try this fun idea. Let me know if you do….I love seeing pics.

For those of you who have been gardening forever, or those who are just not interested, please bear with me as I FREAK OUT ABOUT GARDEN SUCCESS!
I’m a newbie gardener and have so enjoyed the process, and EATING the outcome.
See that big tomato?   We ate it tonight on BLT sandwiches.  Mid-sandwich, my husband looked at me and said “wow, that is one goooooood tomato!” It is ridiculous how happy a compliment on my tomato made me, he’d be a smart man to keep complimenting my tomatoes!:)
See that monster cucumber I am cradling in my right arm?  It’s huge and yellow.  Not sure it is edible, we were out of town for a few days and came back to that beast hanging on the vine.  Anyone know if it will taste good?
I’ve had a hard time catching my squash while they are still young and tender.  It seems like one day they are babies and the next day they are too big!  I’m planning on using my food processor to chop up  the big ones, then freezing them in 2 cup portions to make a zucchini type bread.  I love to grill the tender, young ones-I just got to get on top of harvesting regularly!
So what do I do with all these cucumbers besides making pickles, and raita?  Does anyone have any good summer squash recipes?
