I love salad bars. REALLY, I do! There is just nothing like a good salad full of fresh veggies and lots of yummy toppings. I love the variety and all the bright beautiful colors.
Salads are really a great way to get those servings of vegetables in each day. I try hard to have a salad with every family dinner, and I often make one for myself at lunchtime. If I have some soup on hand, I will make a smaller salad, but if not, I load up the entire plate and top with pasta or chicken to make it more filling.
One of my favorite things in my kitchen is my Salad Spinner. It is so much more economical to buy a head of green leafy lettuce or romaine, than buying the pre-packaged stuff. It takes no time at all to give it a rinse and a spin…in fact, it is so easy that my 6 year old is the official salad spinner in this house. She begs me to be the one to wash the lettuce, break it into pieces and pack it into the spinner. She has so much fun watching the lettuce twirl, and has become quite the salad- eater since owning the job as the “Bowman family salad spinner.” She even asks for seconds now, which is a miracle since not too long ago she spent a nice chunk of our dinners fussing about having to eat her salad. I have found that if we pass the toppings around the dinner table and let the girls help themselves, (I put out a plate with a variety of chopped vegetables and fruit) they are much more likely to eat it. I tell them they have to have at least 3 different colors on their salads, and since they are artistically minded, it often turns into make a “pretty salad” time. I am proud to say (after much doubt that I ever would) that they are all 3 salad eaters. Yippee!
As far as dry toppings, sunflower seeds are very healthful and give good crunch. I also love a sprinkling dried cranberries. I often make my own croutons by keeping the ends of homemade bread (throw them into freezer in a ziplock until read to use), cube them, drizzle with olive oil and sprinkle with garlic salt or what ever seasoning you like. Toast in oven just a few minutes until golden.
As a substitute for croutons, I will take crackers (like Wheat-Thins) and break up a handful and sprinkle it on my salad. I learned that little trick by watching my bro-in-law. (the same bro-in-law that taught me to put Baked Lays Potato Chips in my Subway sandwich:)) I guess we both like an added little crunch! We almost always have a box of crackers on hand, so I do this often.
Other toppings I like to add are grated cheese, hard boiled eggs, (these make great snacks- I try to always have some in the refrigerator, my girls love them and are now even making their own egg salad for sandwiches!) whole wheat pasta, (another thing I try to have on hand in the refrigerator, which we use up especially on the weekends, my girls help themselves to it for lunch and sprinkle with parm. cheese) and fresh fruit–chopped apples, clementines, grapes, strawberries, etc.
I try to keep dressings simple. Todd and I just drizzle ours with a good quality olive oil and a good quality balsamic vinegar. It really is delicious AS LONG as you buy the good stuff.
My girls love the spray dressings that are out by Wish-Bone, Wish-Bone Salad Spritzers, particularly the Red Wine Mist. It is full of red wine vinegar and they love that tang. I have tried to make my own homemade, but have bombed twice. I even tried filling the Wish-Bone bottle up with my homemade dressing, but it didn’t fool them!
Oh well.
I love seeing my family eat their salad! I have found between drinking our green smoothies and eating salads, that it is very easy to get our fruits and vegetables in. It takes a little rinsing and chopping up front, but the health benefits for my family make it very worth it!
**make sure you buy the green stuff! Romaine lettuce and Green Leafy lettuce have seven to eight times as much beta-carotene, and two to four times the calcium, and twice the amount of potassium as iceberg lettuce. Spinach is another green that is amazingly good for you, so throw some of that in, too. As a general rule, the darker green the leaves, the more nutritious the salad green.

The Inspired Room
Clementines make me very happy. Even the name is happy! There are many reasons why:
~they are pretty, such a beautiful bright, shiny orange.
~they are so easy to peel that even little child fingers can do it
~they are usually seedless
~they are the perfect snack size
~they have almost 100% of the vitamin C one needs in a day
~they taste good cold or at room temp
~they are perfect for bagged lunch
~they are a very healthy snack
~they take care of my sweet tooth
~they are fun to juggle with
Clementines are known as the “seedless tangerine.” California clementines are available from mid-November until January; this availability is why they are referred to in some areas as “Christmas Oranges”
I think they would be perfect stocking stuffers!
I had to share this with you all. My sister sent it to me last year around thanksgiving and I have not forgotten it. Oh, to have a heart like this little girl, so joyful and thankful for the small things. The rest of the family makes me laugh, so typical!! At the same time, it is kind of sad! They are so easily distracted, such a stark difference between them and the little girl. I have to ask myself, which one am I?
I truly am trying not to sweat the small stuff or get caught up on the details of thanksgiving this year (read more here). Instead, I am thinking of all the things I have to be thankful for, like…gum, chewing gum!:)
I am hosting thanksgiving this year. I’ve been in a very simple, take- it- easy kind of mood lately, and I am approaching Thanksgiving in the same kind of way. I’m making plans, but not becoming a perfectionist about it. I do not want to get pre-occupied with all the preparation and details, then the meaning of it all becomes an after- thought. Really, it is a precious time to be together as a family and acknowledge the many blessing we have and thank our great God for His goodness.
Here are some of the ways I am planning on making it simple:
Paper Plates–
I’ve used paper plates in the past, and looking back at thanksgiving pictures,(above) it really is possible to create a nice table, even using paper plates. I found the plates in the above picture on sale, they helped give color to the table. I set them on top of some silver chargers, rolled up paper napkins and made a pretty decent table. This year, I am going even more simple and casual. We will be using disposable cups and utensils. I rarely use disposable products, but sometimes it just has to be done. I do not want to spend time washing dishes when my family is over, plus I do not have enough glasses and utensils for 15 people, so I really don’t have much choice. I had a hard time finding disposable plates that were not cheesey or covered with picture of a turkey. Maybe its just me, but I don’t want to lift a bite of turkey up to my mouth, look down, and discover I’ve uncovered part of the plate where the turkey is looking up at me as I eat him. Appetite killer, for sure!:)

I have several friends who have really been great examples to me when it comes to embracing food that is nourishing. It is quite humorous when we get together, it’s not but a few minutes before the subject of food is brought up. We discuss brands of food, where to shop, and recipes we love, among many other things. I love foodie friends! It is often I will get a text from a friend letting me know what is on sale and where, or “the clementines are really good right now at…” It is really fun to have friends who care about what I care about. I have learned much from them, and I want to give them a special lil’ somethin’ for Christmas.

It’s not cookie mix in a jar or fabulous fudge…remember, it is for my friends who get excited talking about what the best substitute for sugar is or how to substitute a healthier fat in a recipe. Now that you have been warned, I will proceed.
Cranberry & Flax Multi-Grain Cereal …Made In A Crock-Pot

Seriously, I think they will love it. It is different, sugar- free, nourishing, and easy! The recipe was posted by “Monkeys On. The. Bed.” I am grateful to her, and look forward to browsing her very cute blog.
I plan on making a mix with the dry ingredients and packaging it cute, with the instructions printed and tucked inside. The only wet ingredients in the recipe is water and applesauce, so it will be very easy to make. It cooks in the crock pot overnight…mmmm, imagine waking up to a house that smells like cinnamon! (at least that is what I am hoping for!) I am going to put it in my crockpot tonight. I quick mixed some together so I could take a picture for this blog post. Multi-Grain Cereal
- Nonstick cooking spray
- 5 cups water
- 2.5 cups natural applesauce
- 1.5-2 cups dried unsweetened dried cranberries (or any dried fruit)
- 1 heaping tsp ground ginger
- 2 heaping tsp ground cinnamon
- 6 Tbl steel-cut oats
- 6 Tbl wheat bran
- 1/2 cup long-grain brown rice
- 1/4 cup pearled barley
- 3 Tbl yellow cornmeal
- 2 Tbl flaxseed
Dash of Salt
11/2 tsp vanilla

I am a cosmetologist, but I have not done hair in a salon for years now. I do keep my skills up by doing the hair of family and friends, it brings in a little extra income, and is much fun!
Changing hairstyles just comes with the territory when you are a hair stylist. I don’t think I have stuck with the same do’ or color for more than a few months. There are just so many to choose from, by the time I get my hair grown out, I find a short style I like, so out come the shears and… CHOP! After I go short, growing it is a fun process because it takes me through the different lengths and I get to experiment along the way.
So at the risk of coming across as very self absorbed, I thought it would be fun to post pictures of the different do’s I have done. I just started taking purposeful pics of my different styles/colors the past few years, just for fun, and to remember the styles I have worn. Oh, how I wish I would have taken more pics through the years of my adolescence and of cosmetology school days. Boy, would that give us all a good laugh! I loved that Rave hairspray, it is amazing how high I got my bangs with that stuff!
Right now, I am collar bone length, and I am my natural color (the last picture is very recent) which is kind of nice since I almost forgot what it looked like. I figured I would experience it for awhile, before I start getting those gray’s and feel like covering them up! I am about to turn 34, and have not seen a gray hair…yet.
