My Favorite Salad

I had a friend bring this salad over to my house and both Todd and I just loved it!  We agreed it is a favorite, we both took a bite and just looked at each other with wide eyes and a smile–yes, it is that good!

 The dressing is tangy, the apples are tart and crisp, the grapes are sweet and the candied pecans are like a crunchy dessert topping!

 I had to have the recipe so I could make it myself and share it with all of you.

Ingredients:

 

~Salad-greens ( I love to use Butter/boston lettuce and red leaf in the mix)

~Red grapes

~Granny smith apples

~Candied pecans (recipe below)

~Dressing (recipe below)

 

Toss and Serve.

Candied pecans-

3/4 c brown sugar (If you are looking for low sugar, I think this could be reduced)

1/2 t cinnamon

1/4 c margarine

1 c chopped pecans

In small pan melt margarine, stir in brown sugar and cinnamon. After that mix in the pecans, coating them with the mixtutre. Pour into pan in single layer and bake at 200 for about 10 minutes. Pour onto wax paper. Cool and separate.

Dressing-

1 c oil

1/4 c sugar

1/4 c vinegar

3 T Dijon

1 T Worcestershire

1/2 t salt

Blend together.

Easy Christmas Ladies Luncheon

I have some very special women in my life.  We used to get together for a Bible study at my house every Wednesday morning.  We did this for 4 years, and it was always a highlight of my week.  We had to stop meeting, due to schedule changes and life taking us in different directions.  I thought it would be great to have them all over for a ladies luncheon, and thought “What better time to do it than Christmastime?”

I set the table, made sure the candles were lit, and the Christmas music was playing.  I left a Christmas treat by each of their plates (Lindt Lindor Truffles), which added a little touch of Christmas color to my black and white table.

 Menu:
Soup-Chicken Tortilla Soup
Salad-Cranberry Spinach Salad
Bread-Honey Whole Wheat Bread
Dessert-Andes Mint Cookies
Something Fun To Drink-Cranberry Spritzer
Something Warm To Drink-Coffee & Hot Tea

Soup:
It was a very cold and snowy week here in Nebraska, so soup was an obvious choice.  My cousin, Keeli, passed on a Chicken Tortilla Soup recipe that I have been wanting to try, so I did—and boy, am I glad I did! Yum!  I set out chips, salsa, shredded cheese; tortilla strips and brown rice, and let them help themselves to whatever toppings they wanted.

Chicken Tortilla Soup
1 pound shredded, cooked chicken
1(15oz) can whole peeled tomatoes,mashed
1(10oz) can enchilada sauce
1 medium onion, chopped
1(4oz) can chopped green chile peppers
2 cloves garlic, minced
2 cups water
1(14.5 oz) can chicken broth
1t cumin
1t chili powder
1t salt
1/4t black pepper
1 bay leaf
1(10oz) frozen corn

Flour Tortillas, cut into strips, optional
Shredded Cheese, optional

Place chicken, tomatoes, enchilada sauce, onion, green chiles and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn. Cover, and cook on low setting for 6-8 hours or on high for 3-4 hours.  Serve in bowl topped with tortilla strips and shredded cheese, if desired

I had shredded chicken on hand b/c I had made this recipe.  I put it together the night before and then just plugged it in and set it on high and it was ready in time for lunch.

Salad:
This is my go-to easy salad recipe.  Whenever I am asked to bring a dish, this is one I often choose to bring.  I can just buy the ingredients, bring a bowl and tongs, dump it all a bowl and toss once I am there.  This is a no-recipe, recipe.


Cranberry Spinach Salad
Bag of Spinach
Bag of Dried Cranberries
Slivered Almonds
Feta Cheese
Newman’s Own Lighten Up Raspberry Walnut dressing
Croutons
Dump Spinach into large bowl.  Add the rest of ingredients, amounts according to taste.  Toss and Serve.


Bread:
Honey Whole Wheat Bread
I like this recipe because I can just put it in my bread maker and choose the dough option.  Once it beeps, I put it into a loaf pan and let it rise another 1/2 hour or until about double, then bake.  I could just leave it in my bread maker and choose loaf setting, but I like the shape of a regular loaf pan.

Cranberry Spritzer
You can make your own (equal parts of cranberry juice and sprite) or buy a bottle like I did.  


 This luncheon really was easy.  Every recipe I chose was super simple and I already had the shredded chicken and cookie dough on hand in my freezer. 


We had a great time.  I have to admit, seeing each of them walk through the door made me REALLY miss our Wednesday Bible Study time together! 🙁
 I am so very thankful for the friendships I have, God has blessed me big time!!

Does Your Lunchbox Make You Special?!


One of my least favorite things to do is pack lunches for my girls to take to school.  They have never had cafeteria school lunch (well, one of them snuck a chocolate milk and had to do a bunch of chores to pay for it. eyyy.)  At first, my reason was because it was much cheaper.  Now, after reading up on health, I am glad they take their own lunches. I’m ok with occasional processed food, but EVERY day for lunch?  Nope, can’t do it.  I have to admit, I do A LOT of peanut butter and jam.  A LOT.  I grew up on the stuff and to this day love it!  I make ours with yummy homemade bread and jam, but they are still getting sick of it, so I have been trying to get a bit more creative by packing some hot food in a thermos.  I LOVE, LOVE, LOVE these  Funtainer Food Jar by Thermos. You fill them up with hot water from the faucet, let them sit a few minutes to warm, dump out the water and fill them with hot food.  My girls say they are still nice and toasty warm at lunchtime, and they get so excited to open their lunchbox and see a thermos instead of another peanut butter and jam sandwich. 
So on to the title of this blog post. 
The girls hang their lunch bags up every day on a hook in the pantry when they get home from school.  My youngest daughters hook happens to be right above the trash can, and this morning her lunch bag was missing.  I asked her about it, and she insisted that she hung it up.  I believed her because it is a great habit of hers and she always remembers. After staring at the empty hook for a minute, and then looking down at my empty trash can with a brand new bag in it (thanks to my wonderful husband who takes the trash out every morning) it dawned on me what must have happened.   I asked the girls if any of them had seen the lunch bag in the trash, AND CAN YOU BELIEVE I GOT A YES!!   AND CAN YOU BELIEVE THEY DIDN’T REACH IN TO GET IT AND HANG IT BACK UP??!!  

My husband left for work by this time and I was NOT about to go dig in our trash bins (we’ll let him do that when he gets home, poor guy) so I went to look for an old lunch bag. As I triumphantly pulled out the extra Scooby Do lunch bag, my youngest (the one with the missing lunch bag) crumbled like her world was coming to and end.  “Mom!!”  (sob, sob) “I’m too old for a Scooby Do lunch box!!”(sob, sniff, sob, her six year old head in hands)  Knowing the school bell would be ringing soon, I knew we had to do this conversation quickly.  Me- “Honey, why are you special?”  6 yr old-(sniff, sniff) “because God made me”  Me-“Would you still be special if you went to school with an ugly, torn, stinky lunch bag?” 6 yr. old (sniff and slight chuckle at me plugging my nose which changed my voice when I said the word stinky) “yes.” Me-“are you still special with a Scooby lunch box?” 6 yr old-(big sigh, arms crossed, pouty downward pointed eyebrows) “yes.”  Me- (with a tickle to try and erase the pouty eyebrows) “well, its a good thing a lunchbox doesn’t make you special” 6 yr old-(arms still crossed, too stubborn to give in to the tickle) Me-(quick, very strategic change of subject) “hey, I think it might be sprinkling, that means you get to carry your very own umbrella!!”


Thank goodness, the change of subject worked and off to school she went, smiling and waving,  Scooby lunch bag in hand and still feeling special.
*if you are wondering about the lunch bag in the picture, I have a girl that is really into black and pirates of the caribbean.  Girls don’t HAVE to like pink, ya know.  I think she knows that it is not her lunch box that makes her special.:)
