5 Warming and Comforting Drink Recipes To Sip Slow and Savor

Warming spiced almond milk

Fall is my favorite. I get all nest-y when cooler weather hits. I get out the fuzzy socks, drape my couch in snuggly blankets, light candles and make sure my Kindle is full of good reads.

I fight the hustle and bustle of life, deliberately slow down and nestle in.

I delight in evenings when we are all home together, and when it happens I make sure there is soup simmering, and often offer mugs of warm drinks after dinner.

Even when I can’t gather my 3 lovelies (as they are teenagers and often scattered), you can still find me most fall evenings with a warm mug in hand.

Here are 5 favorites that I have on rotation:

5 Warming and Comforting Drink Recipes To Sip Slow and Savor

Warming Spiced Almond Milk

1 cup almond milk

1 tablespoon almond butter

1 tablespoon almond milk creamer, vanilla flavor (optional)

1 tablespoon pure maple syrup

1/4 teaspoon cinnamon

a pinch of ginger

a pinch of cayenne

……….

Combine all ingredients in a small pan.

Heat on the stove over medium heat until warm.

Sprinkle top with a touch of cinnamon for pretty. Sit down, inhale, and sip slow.

Hint: if you like a bit of froth on top, you can put it into a blender & blend (venting to allow steam to escape) or use a french press and plunge a few times until bubbles form.

3 Ingredient  Pumpkin Spice Chai

1 cup milk (I used almond)
2 pumpkin spice teabags
3/4 cup chai concentrate, or to taste

Put milk into a saucepan.  Add teabags.  Steep the teabags in milk for 5-7 minutes & warm to desired temperature.  Add chai concentrate.  Stir.  Pour into 2 mugs, sit with a loved one and sip slow.

Hint: if you don’t have pumpkin spice tea (my favorite is from Trader Joes) you can use black tea or rooibos tea and sprinkle in a little pumpkin pie spice. Also, the brand of chai I like is Oregon Chai Concentrate. Tazo is another popular brand but its cardamom flavor is too strong for my taste.

ALMOND VANILLA MAPLE SPICED MOCHA

1 cup vanilla almond milk

1/2 cup double- strength brewed coffee

1 Tbsp cocoa powder

1-2 Tbsp maple syrup

pinch of cinnamon

2-3 dashes of cayenne or a pinch of red pepper flakes

pinch of salt

……….

Brew a double strength coffee. Heat the almond milk until quite hot. Add cocoa powder. Whisk the cocoa powder into the milk, briskly stirring until all clumps have melted away. Stir in the coffee, spices and maple syrup. Adjust the sweetness and spice according to your own taste. Snuggle up in your favorite chair and sip slow.

Hint: if you don’t have vanilla flavored almond milk, just add a drop or two of vanilla extract.

Godiva Liqueur Hot Chocolate

Best Ever Hot Chocolate

8 oz  milk of your choice (almond, soy, dairy)

3 Dove chocolates (or your favorite brand chocolate square, milk or dark, I like dark)

1-2 teaspoons Godiva Chocolate liqueur

1 1/2 teaspoons sugar (optional)

……….

Heat in microwave until hot (less than 2 minutes.) Whisk until combined.

Sit back, relax, and sip slow.

Hint: use my favorite frother to whip it up and make it extra creamy and beautiful. 

 

Ginger-Lemon-Tea-Slider

Honey Lemon Ginger Tea

1/2 inch fresh ginger root, cut into slices (no need to peel)

2 wedges of lemon

1 tsp raw honey

……….

Squeeze 2 wedges of lemon into your tea cup. Add the wedges into the cup for added benefits of the oils from the lemon skin. Add 2 slices of ginger. Heat water in a tea kettle–I love my electric one that heats in minutes. Pour over ginger and lemon. Add honey and stir. Steep for a good 5 minutes. Strain, hug the mug, inhale the steam and sip slow.

Hint: both lemon wedges and ginger slices can be kept in the freezer in small mason jars. The hot water will thaw them. Also, a tea cup with an infuser like my favorite one is very handy.

Matcha Latte & Matcha Chia & Pear Cereal

Matcha powder can be enjoyed in so many ways. Here are some ideas of how you can enjoy matcha:

• Creamy frothy coconut milk matcha latte (recipe below)
• Matcha milkshake over ice
• Matcha chia cereal (recipe below)
• Added to your green smoothie
• Throw some into your baked goods

Here are 2 simple recipes for you to make using matcha:

Matcha-tea

Matcha Latte

1 cup of coconut milk (or any nut milk of choice)
1/2 tsp of matcha powder
Small amount of hot water to blend
~Heat your milk on the stove or use your coffee machine

~In a cup or small coffee plunger, add your matcha powder & mix a small amount of boiling water in and give it a good stir to break up all the lumps.  (A tiny whisk would be helpful, or for the matcha enthusiasts you can actually buy a bamboo matcha whisk also called a chasen. But that is totally optional. I just use a fork.)

~Once you have whisked the powder well then add your hot nut milk. I like to use a single serve coffee plunger when making matcha. I then use the plunger to plunge up and down fast to create lovely frothy milk.  If you do not have a coffee press, simply heat the milk using your coffee machine

~Serve in your favourite cup or bowl. Add sweetener of choice as matcha does have a slightly bitter taste. I use stevia but coconut nectar or raw honey would work great also.

 

Matcha-pear-cereal

Matcha Chia & Pear Cereal

1-2 Tbs of chia seeds
1/2 tsp of matcha
1 cup of almond milk
liquid Stevia (or sweetener of choice)
cinnamon
1/2 pear thinly sliced
crunchy topping for texture –I like to add dehydrated sprouted buckwheat

~Combine your chia seeds, sweetener & matcha powder with your nut milk in a serving bowl.

~Mix well and wait a few minutes for the chia seeds to swell.

~Thinly slice your pear & add half the pear to the chia mix along with cinnamon.

~Top it off with the rest of the thinly sliced pear and your crunchy topping for texture and another sprinkle of cinnamon.

Honey Ginger Lemon Tea – A Cold Reliever

Yesterday there was a blizzard here in the Midwest.  It was super fun to be snowed in, even though it was Super Bowl Sunday. We stayed in our jammies all day, I made a big ol’ lasagna, and my Avery made some chocolate chip cookies.  It was a super slow, super chill, super fun Super Bowl Sunday!

Today my 3 girls had a snow day as the roads were still a mess and the windchill was too low to be outside and stay safe.

We decided it is the perfect day for tea, especially when my Avery girl (11 years old) came to me and said “Mom, I think I’m getting a cold.  My nose is stuffy and my throat is a little sore and has ‘stuff’ running down the back of it.”  Oh no. Not cool.  Especially when she has been home bound for 2 days already.  She will be extra bored with a 3rd day at home, especially if she is not feeling well.

Time for a cup of good, healthy tea.

I’ve been drinking this particular tea every morning, shortly after I wake up, and before I have a cup of coffee.  It is a great way to hydrate and get all those amazing good things that lemon- in -water gives you.  The addition of honey and ginger makes the tea even more nutritious. When I drink it in the mornings, I add a pinch of cayenne.  I’ve read that it is a great way to stimulate the liver to do its detoxifying magic first thing in the morning.  Read more about that here. 

I know when I have a cold, sipping on something hot is so very soothing.  I prefer something hot & light…like chamomile tea or this honey ginger lemon tea.  The steam will warm you  right up, and the ginger & lemon will help clear sinuses, and the honey will help soothe a sore throat. My sweet Avery certainly enjoyed it
and was very thankful for her cup of tea.  Later I will make her my Sweet Tart Smoothie for even more nutrition from aronia berries.  I do not want this cold going anywhere but away!

The lemon in the tea gives a nice dose of vitamin C & there is wonderful goodness to the essential oils that diffuse into the tea from the rind of the lemon.  The ginger, honey and lemon all have their own natural medicinal qualities so when you drink them combined, they create a calming and relaxing tea that can ease cold symptoms and boost immunity.

This cleansing tea will become a favorite , whether you have a cold or not.  Make it for your family.  You will love it and so will they.  It tastes like a lightly sweetened hot lemon drink, with just a hint of ginger flavor.  It is so very thirst quenching and soothing.

Before we move on to the recipe, I have a great tip for having ginger on hand and how to store it. It is to keep it in the freezer.  I like to store it in mason jars in the freezer 2 ways.  One–sliced thinly for tea.  Two–in chunks in a jar ready to be grated and used in the next recipe…like Korean Beef over Rice.  Frozen ginger is easy to peel and grate, and it lasts so much longer in the freezer.

2. Ginger clears the “microcirculatory channels’ of the body, including the pesky sinuses that tend to flare up from time to time.

On to the recipe.

 

Honey Ginger Lemon Tea

6 oz hot water

1 teaspoon raw honey

1 teaspoon thinly sliced ginger

1/2 lemon

 

~Start heating up water.  I LOVE my electric tea kettle and use it everyday.  It does a great job of heating the water quickly and keeping it warm for multiple cups of tea throughout the morning.

~Take a tea cup that has an infuser in it, and using a fork, pierce the half of lemon while holding it over the infuser and twist the fork and lemon to juice it.  Squeeze as much of the juice out of the lemon half as possible.  Cut the lemon half into 2-4 pieces.  Add them to the infuser.

~Meanwhile, take 1 teaspoon of thinly sliced ginger and put into the infuser.  (Slice using a mandolin and store in the freezer in a mason jar.)

~Last, take 1 teaspoon of honey and drizzle it over the lemon and ginger.

~Put the infuser into the cup of tea, then pour hot water over.

~Let steep 3-4 minutes.

~Lift the infuser our of the cup and enjoy your amazingly light, clean, fresh & oh- so- good for you Honey Ginger Lemon Tea!

How To Use Fresh Mint — 20+ Ways!

I decided to grow fresh mint as the focal point in two of my flower pots this year.  It is growing beautifully and I’ve been so excited to use it, but other than tea, I needed some inspiration.

New Nostalgia has an amazing & growing Facebook community.  I love being able to have real conversations with you all over there.  I knew if I asked them what to do with all my fresh mint that I would get some inspiration, and they totally came through for me!

Jill B. — “With peas!!  A little olive oil, mint, and peas blended on toasted pieces of bread.  SO YUMMY!”

Maggie R. — “I am drinking water with crushed mint” She also adds chiffonade of mint to fresh fruit, adds it to her coconut oil for washing her feet & wants to add it to a pitcher of water for a mint hair rinse.

Tastes like a Shamrock Shake.  Also, use fresh mint in taboulleh salad, gyro sauce for chicken or salmon, and mint freezes well, too.”

I love the idea of putting it on my watermelon, making a mint pesto/salad dressing, and LOVE the healthful ingredients in the Shamrock Shake. Girls-Flower-Pots

If you end up using mint in your own pots or garden, be aware that it is a super invasive plant.  It loves to grow and take over all the other plants.  To help with this, you can keep mint in a pot and bury the pot in the garden.  If you are going to use mint in your flower pots along with other flowers, keep it in it’s own pot, or do what I did, which is buy a mint plant that is in a peat moss pot, and rip the bottom off, keeping the sides in-tact.  This will keep the mint from growing outward, and taking over the rest of the flowers in the pot.

Fighting Colds With Homemade Honey Lemon Ginger Tea

My favorite way to make Honey Lemon Ginger Tea:
~Cut some organic ginger root into 1/4′ slices (no need to peel)
~Keep slices in a small mason jar in the freezer
~When you are ready for some tea, squeeze 2 wedges of lemon into the tea cup.
~Add the wedge itself into the cup for the added benefits of the oils from the lemon skin.
~Add 2 slices of ginger.
~Heat water in the tea kettle.
~Pour hot water over ginger and lemon.
~Add 1 tsp or more of honey until desired sweetness.
All of this is to taste.  Add more or less ginger.  Same with lemon. I steep for a good 5 minutes.
It is that easy!
My favorite teacup and electric tea kettle make this process very easy!  The electric tea kettle heats water up in minutes and keeps it hot for hours.  The tea cup has its own saucer, strainer, and a lid to keep it hot or to set the strainer in when steeping is done.  I LOVE this cup!

My Personal 31 Days Of Tea-LC Challenge + Another Tea Giveaway

 I just chose a winner for my last Celestial Seasonings 31 Days of TeaLC giveaway, and there was so much excitement about it that I though we should do one more!

I talked last week about just how much I love hot beverages in the winter.  I love chai, coffee and tea, but because I am a cancer survivor, health and immunity are super important to me. I own an electric tea kettle, and it is by far one of my most favorite kitchen appliances, especially in the winter.  I fill it with water in the morning, then flip the button to “on.”  In just a minute or 2, I have hot water for my tea.  The kettle keeps the water hot for a long time, so I refill my mug often.  If it has been a couple hours since my last cup of tea and I want more, I simply flip the switch to “on’ again. It is a great way to have hot water handy all throughout the day. I LOVE it.

There are 2 teas from Celestial Seasonings that I must talk about.  I will start with my most favorite–Natural Detox Wellness Tea.  I was super excited to see a Celestial Seasoning tea containing Milk Thistle.  I have taken Milk Thistle in supplement form ever since I finished chemo & radiation.  Milk Thistle is known for its detoxing properties, and is great great for the liver.  Chemo wreaks havoc on the liver, which is the bodies main detoxing organ, so restoring my liver to its full working condition was really important to me.  I was hoping I would like this tea, especially if it meant eliminating an expensive supplement that I would usually take in pill form.  This tea did not disappoint. The creamy vanilla flavor is really comforting.  It is interesting for something to taste “creamy” when it is not, but it does!  I love it, have drank a ton of it already, and I’m not even close to being tired of it.

Antioxidant Max Green Tea Blackberry Pomegranate 

My second favorite tea that they sent is their Antioxidant Max Green Tea Blueberry Pomegranate.  Green tea is another really important ingredient in a healthy diet.  Green teas provide powerful flavonoid antioxidants that can help reduce the cell-damaging effects of free radicals.  This is not only good for cancer patients whose treatment is so harsh and damaging, but also for healthy people who want to stay that way.  Cancer is simply cells misbehaving that are damaged, so it makes sense that reducing free radicals that damage cells is cancer preventative.

This tea would taste great in the warm months, too.  It would be really refreshing to serve it iced.
