I’ve been wanting to write about Coconut Oil -how and why I use it, but instead I am going to send you over to Sorta Crunchy. Meghan wrote a great post on it–very informative. She gives the how and why, and also some great links to order some online, which is what I will be doing the next time we run out.
When I first started reading about different health foods, coconut oil was intimidating because I didn’t know how to use it, what to use it for, and if it would have an weird taste. Now, I am so glad I just bought some and tried it. Because of coconut oil, I no longer need to keep vegetable oils and canola oil in the house. The fats I have in my kitchen are butter, olive oil, and coconut oil. It is all I have needed, and I feel great serving my family these types of fats.

I USE IT IN EVERYTHING I COOK. I TRY TO GET IN AT LEAST 3 TBS DAILY. I USE IT INSTEAD OF BUTTER, EVEN ON MY MORNING TOAST, FRY MY EGGS, BAKE (USE A LITTLE LESS THAN OTHER OILS), USE IN STEWS, SOUPS, ETC. THERE IS NO END TO IT’S USES. STARTED OUT WITH VIRGIN, BUT TOO MANY COMPLAINED OF EVERYTHING I COOKED TASTED LIKE COCONUT, SO STARTED BUYING EXPELLER-PRESSED (SAME COMPANY)BECAUSE IT IS TASTELESS AND PEOPLE STOPPED COMPLAINING AND STILL WERE GETTING ALMOST ALL THE SAME BENEFITS. a LITTLE OVER 6 YEARS AGO I RECEIVED THE GIFT OF A DOUBLE-LUNG TRANSPLANT. May 9, 2012 at 12:44 amI finally was able to use my coconut oil for these yummy looking bar’s of yours. I have had it in my pantry for about two months trying to decide how to use it. I knew it was good for you, but was just waiting to figure out how to use it. Thanks, plan on getting rid of all my oils except for coconut,olive and once in awhile butter!! 🙂

you will see that they recommend coconut oil for deep fat frying. I never use this method of cooking, but it looks like I know what to use now if I ever do!

February 4, 2010 at 9:10 amI have learned thru a nutritionist, MCT oil or Coconut Oil move thru the digestive system faster, aids in weight loss, and since is a medium chain triglyceride, moves out of your system faster than say Olive or Peanut oils..do. I have been using it for about 2 mos now, my pre-diabetes is gone, as is about 25 lbs if not more.
